        This study examined the dietary habits and nutrition quotient (NQ) scores according to leftover food during school meal services among middle school students in the Gyeonggi region. A survey on the dietary habits was conducted among 405 male and female middle school students located in Seongnam City, Gyeonggi Province. The amount of leftover food in the school meals was surveyed using the visual method through a questionnaire over two days. The survey was conducted from July 8, 2019, to July 12, 2019. After calculating the average total leftovers of each student over the two days, they were categorized into the following three groups: the top third was the large leftover group. The middle third was the medium leftover group, and the lower third was the small leftover group. The characteristics of the groups that had leftovers were analyzed. Female, normal-weight, and underweight students accounted for a greater proportion of the large leftover group than male, overweight, and obese students. The rates of selective eating and compliance with new food intake were significantly lower in the large leftover group than in the small leftover group. A comparison of the nutrition quotient for the adolescent (NQ-A) scores of each group revealed significantly lower scores of the large leftover group for all factors (balance, moderation, food diversity, practice, and environment) than the small leftover group. Therefore, there are statistically significant differences in the dietary habits, nutritional quality, and eating behaviors of middle school students that are associated with the amount of leftover food during school meals.

        This study was performed to provide fundamental data on the dietary habits and food purchase types according to the stress patterns. The subject was 312 Chinese students in Gyeonggi region through a self-administered questionnaire. According to the results of the reliability analysis, the stress items showed an average of 2.91 and 0.846 for Cronbach alpha coefficient. The results of ANOVA analysis on the difference of dietary habits according to stress are as follows; There were significant differences for the meal frequency per day according to schoolwork, economic, general living, and dietary habits (p<0.05). Also, the general living pattern showed significant differences for the meal outside frequency and Chinese food intake (p<0.05). The results of ANOVA analysis on the difference of food purchase type according to stress are as follows; There was significant differences in degree of use of convenience foods according to interpersonal relationship, cooking method of convenience foods according to economics, the selection criteria of convenience foods according to schoolwork (p<0.05). The correlation coefficient of dietary habits and convenience food intake are 0.223, -0.147 in stress degree and dietary habits. In conclusion, I would like to provide the basic data necessary for the right choice of Chinese students' dietary habits and food purchases.

        This study examined the lifestyle factors, dietary attitudes, food habits, and dietary nutrition intake of college students before and after nutrition education. A total of 44 college students were recruited and a questionnaire survey was conducted. Dietary nutrient consumption was obtained from the one day 24-hr recall. Scores on ‘Concerns about health (p<0.05)’, ‘Regular exercise (p<0.01)’, and number of steps (p<0.001) were significantly higher after-training. The dietary attitude (31.3 vs. 33.7, p<0.01) and food habits (53.5 vs. 59.7, p<0.01) were significantly higher after-training. The scores on ‘Eating a lot of food that I want to eat is more important than nutrition (p<0.01)’, ‘I am interested in information on nutrition and health (p<0.01)’, ‘Have three meals a day (p<0.01)’, ‘Have breakfast regularly (p<0.01)’, ‘Drink milk every day (p<0.001)’, ‘Have fruits every day (p<0.05)’, and ‘Apply nutrition knowledge to daily life (p<0.001)’ were significantly higher after-training. Among the nutrients intakes, the protein (p<0.05), vitamin C (p<0.01), and calcium (p<0.001) were significantly higher after-training. Nutrition education improved the lifestyle factors, dietary attitudes, food habits, and dietary nutrition intakes.

        Purpose: This study investigated the dietary patterns associated with Korean food and the level of proper eating habits according to recognition of the Kimchi cooking method, and aimed to suggest the necessity of dietary education of traditional foods such as Kimchi. Methods: Based on the results of the national dietary survey conducted in 2014 by Ministry of Agriculture, Food and Rural Affairs of Korea, a total of 1200 subjects were classified into two groups, one that knew how to make Kimchi (53.8%) and another that did not (46.2%). Results: The group that knew how to make Kimchi (FG) showed significantly higher scores in knowledge of how to cook most types of Korean foods and traditional fermented foods than the other group (NG). Moreover, FG showed significantly higher scores in regularity in meals and a higher frequency of Korean foods such as rice, Kimchi, and grilled or stewed food, while it showed significantly lower scores in dietary risk factors than NG. In addition, FG showed significantly higher scores in dietary education interest and number of meals with family during the week than NG. Finally, FG had significantly higher scores in the degrees of practice of all eight items related to proper eating habits. Conclusion: Since recognition of Kimchi cooking has a great influence on maintenance of dietary life, dietary education to improve the cooking ability of traditional foods should be further strengthened.

        This study investigated the nutrition knowledge, dietary habits, and food intake frequency according to hospitalization after breast cancer surgery and experience of breast cancer among female adults residing in the Bucheon area. Subjects were 52 female breast cancer survivors 27 in the hospitalization group (HG) and 25 in the non-hospitalization group (non-HG)] and 52 controls. Data included the results of self-administered questionnaires, as well as anthropometric data and blood biochemical values of breast cancer survivors collected from electronic medical records. Statistical analysis was performed using SPSS 20.0 program. Nutrition knowledge and dietary habits revealed no significant differences between HG and non-HG, but intake frequency of root and tuber crops and kimchi was significantly higher in the HG group than the non-HG group (p<0.05). According to experience of breast cancer, total scores of nutrition knowledge among survivors (8.2) were significantly higher than those of the control group (6.3) (p<0.001). Fish and shellfish and fruit intake frequencies were significantly higher in the survivors group, whereas intake frequency of fast food, convenience food, and alcohol was significantly lower compared to the control group. Overall, these findings indicate it is necessary to develop and spread nutrition education guidelines to prevent the occurrence and recurrence of breast cancer.

        Although adolescents’ obesity prevalence increases recently in Korea due to Westernized dietary life, according to social and economic development, and physical activity decline, distorted body image and improper dietary habits are prevalent, because of excessive obsession with weight control, deriving from psychological impacts including appearance supremacy. This study conducted a survey on health oriented awareness and attitude related with dietary habits targeting adolescents, such as high school students and college students, younger than 24, from May 11 to May 29, 2015. In this study, 280 questionnaire copies were collected out of 300 distributed questionnaire copies, and used 269 copies as analysis data, except 11 copies of which responses were inadequate. The results of this study are as follows: First, the high school students showed higher dietary regularity than the college students. Especially, 95.5% of the college students showed very high irregularity of lunch, compared with just 4.5% of the high school students. Second, the adolescents showed distorted perceived body image in comparison with body mass index (BMI). As a result of examining BMI relationship, according to one’s own perception on body type, 28.6% of the respondents perceived themselves fat, despite normal BMI, and 40.4% of the respondents perceived themselves normal, despite low BMI. Third, health behavior activities level was higher, as the regularity of breakfast (B=1.093), lunch, (B=0.650), and dinner (B=0.765) was higher. The variable affecting the most (β =0.372) was the regularity of breakfast. As interest in weight control was higher, health behavior activities was lower. Because over-interest in weight control may be linked with improper dietary habits or weight control, a caution is needed. The results of this study are expected to be utilized as the basic data for the policy and health-oriented program development to improve adolescents’ health behavior practice.

        This study investigated the correlation between consumer’s buying habits and food styling visual elements. Differentiated and original techniques were used to determine whether or not visual elements in tteok menus reflect the aesthetic needs of consumers without altering the nutrition of tteok. The targeted tteok cafes were in Jeonju Hanok Village, which is a tourist attraction in Korea. First, sub-factors of food styling visual elements applied to tteok café menus such as shape, size/volume, color, and texture all had significantly positive effects on customer satisfaction, proving that food styling visual effects applied to tteok café menus have significant effects on customer satisfaction. Second, sub-factors of food styling visual elements applied to tteok café menus all had significantly positive effects on buying habits. Third, customer satisfaction of menus had a significant effect on buying habits, as proven by previous studies. Fourth, the effects of customer satisfaction on the relationship between food styling visual factors applied to tteok café menus and buying habits were investigated.

        To investigate the preference of food of the elderly for developing processed elderly food, this study was conducted from February 2014 to March 2014 by questionnaire including dietary behaviors, food preference, and frequency of food intake to 119 elderly (49 males and 70 female) who were more than 65 years old and living in Jeonju. Most subjects ate three meals regularly and most of the subjects’ favorite meal time was lunch. The duration time of one meal was 20 min (48.74%). The most preferred taste was delicate and sweet. The subject preferred cooked rice with multi-grains, kalguksu (hot noodle), and abalone porridge to other staple foods. Almost 50% of the subjects liked soybean paste soup and stew, and the ratio of elderly who liked Chinese cabbage kimchi was 72.3%. Preference for panfried foods leaned toward pan fried fish fillet and mung bean pancake. Most subjects preferred plant foods like vegetables, lettuce, and seaweeds. The elderly in Jeonju liked roasted pork, grilled yellow croaker, and stir-fried octopus. Cooked and seasoned vegetables (namul) were the most preferred type by the elderly. Preferences for dishes and food materials were not affected by sex and ages. Most subjects preferred eating out with Korean food. Preference for eating food was selected in grilled beef ribs, a pork cutlet, sushi·broiled eels, and Chinese noodles. Western Japanese and Chinese food were preferred by an elderly subject, who was male and who liked Japanese food more than female.

        This study was designed to provide the basic data of an effective nutrition education for desirable lifestyle and dietary habits to improve the nutritional status for the elderly by investigating health-related lifestyle, dietary habits, nutritional knowledge, and food intake of the elderly. The subjects included 58 elderly men and 146 elderly women. 35.8% had no more than an elementary school education. Most subjects (54.4%) were widows/widowers. Most subjects (71.0%) made over 150,000 won. 52.5% of subjects lived in houses. Smoking, drinking, exercise, the average sleeping time were significantly difference between the gender (p<0.05). In terms of dietary habits, our results showed that 80.9% of respondent eat regularly meals, including breakfast (83.5%). Both sexes prefer soft and salty food. Women enjoys more spicy and salty food compared with men and then shows meaningful difference (p<0.05). Their favorite meals are soup, stew, salad and boiled vegetables. Compared to women, men have a higher rate of correct answers about questions related to nutrition knowledge as showing significantly difference (p<0.05). In a study of dietary habits, they take in carbohydrates with the highest percentage and following by vegetables and fruits. The amount of meat, first and egg they eat is more than the previously. Eating meat is higher men as showing significant difference (p<0.05). In summary, nutritional status for the elderly shows healthy lifestyle and diet about half of those and most them try to live healthy life in future. It is hope that the elderly may need to learn proper nutrition knowledge for healthy lifestyle and nutrition education and counseling for building up healthy lifestyle and desirable dietary habits. Furthermore, it is necessary to start work to establish a baseline nutritious evaluation for the elderly and at a time to study the development of standard eating tool proven reliability and validity, consequently to provide a basic framework for the evaluation of nutritional status.

        This study was conducted to investigate the eating habits and food preferences of elementary school children belong to multi-cultural families and ordinary families. The data were obtained by interview based on questionnaire from November to December in 2012. The subjects of multi-cultural families and ordinary families were 99 and 376 children, respectively. In comparison with eating habits, the ordinary children showed higher scoring in the items of eating proteins, green and yellow vegetables, and fruits or fruit juice than those of multi-cultural children. The ordinary children ate less midnight-meals than those of multi-cultural children (p<0.05). Furthermore, the ordinary children ate kimchi more frequently than the multi-cultural children. It was significantly different (p<0.05) on the items of ‘eating-out types’ dietary habits between two groups. Education of mothers correlated with the ordinary children’s eating habits more than multi-cultural families. In the investigation of the food preference to Korean foods, ‘beef and radish soup’, ‘pumpkin porridge’, and ‘wheat flakes noodles’ were more preferred by children of ordinary families than by those of multi-cultural families (p<0.05). To conclude, nutritional education for their parents should be done and maintained to keep a right eating habit of children of multi-cultural families even at home.

        This study was carried out in order to investigate Korean food acculturation by married immigrant women and how it affects their children’s eating habits. Using an in-depth interview method, 26 domestically residing married immigrant Chinese, Vietnamese, and Indonesian women in Korea were surveyed to investigate adaption to Korean food at the time of their immigration, their current dietary life, their preferred Korean food, major factors in managing their children’s eating habits, etc. The results reveal that depending on the married immigrant women’s country of birth, which plays an important role in a family’s dietary life and health, acculturation phenomena occurred in which the specific eating habits of each country were grafted into Korean food. Furthermore, due to their school-age children’s display of acceptance of both their homeland’s and Korea’s food culture, we believe that this can become a pivot point for non-governmental diplomacy where Korean food can be understood along with the mothers’ countries.

        The present study was designed to investigate health-related life habits, food preference, body composition for proper dietary habits, health promotion of communities in Incheon area. The effects of personal characteristics and health-related life habits such as gender, age, having breakfast, smoking, drinking, and exercise were analyzed using a surveying. 961 community subjects (262 males and 699 females) were investigated using a questionnaire and Inbody. Data were analyzed by descriptive statistics, chi squared test, and one-way ANOVA (analysis of variation) with SPSS/WIN 21.0. The result of gender distribution showed there were 262 males and 699 females, and with respect to the effect of gender on healthrelated life habits, smoking, drinking, and exercise showed significant differences (p<0.05), whereas having breakfast was not significantly difference (p>0.05). Therefore, the present provide evidence of a relationship between health-related life habits and gender. Regarding the effect of BMI on health-related life habits, exercise showed significant differences (p<0.05), whereas smoking, drinking, and having breakfast were not significantly difference (p>0.05). Thus, the present study also provides evidence of a relationship between health-related life habits and BMI. Our analysis shows that food preference and body composition were significant different from health-related life habits such as smoking, drinking, exercise, and having breakfast (p<0.05). Our analysis showed that body composition was significant differences from health related habits such as smoking, drinking, exercise, and breakfast (p<0.05). In conclusion, the present study suggests that diet guidelines support and improve health promotion designed by communities.

        The purpose of this study was to investigate improvement of food habits and eating behavior in children with obesity andprecocious puberty by nutritional education monitoring. The results are as follows. Average height and weight of subjectsexceeded Korean height and weight standards for children as outlined by The Korea Pediatric Society. Using nutritioneducation monitoring, meals became more regular, overeating significantly decreased, and eating speed decreased. Further,frequencies of eating-out and night-eating significantly decreased. The most preferred menu item when eating-out wasKorean food, and the most preferred menu item for night-eating was fruits, fast food, & processed food. Meat & fish andvegetable intakes all significantly increased. Fruit and milk intakes also significantly increased while bread, snack, and icecream intakes decreased. Further, fast food & instant food intakes decreased. However, water intake was not significantlyaffected. The favorite food of children was meat & fish, followed by fast food & processed food. This study may provideinformation on dietary behavior of children with obesity and precocious puberty and suggests that nutrition education orcounseling can improve food habits and eating behavior.

        The purpose of this study was to investigate the health status and food habits of male college students in Seoul according to drinking habits. In order to identify risk factors, health surveys were conducted from October 2013 to December 2013. Average height, weight, and BMI of subjects were 175.47±5.27 cm, 67.93±9.28 kg, and 22.04±2.67 kg/m2, respectively. Weight and BMI were higher in the non-drinking groups compared to the drinking groups (p<0.05). Frequency of drinking was 2~3 times per month, and 52.4% of subjects started drinking when starting university. The motivation to start drinking was cited as “From necessity”. Reason for drinking was “Social relations”. The favorite kind of drink was beer. Rate of taking supplements was 24.4% of the subjects. Vitamin preparations were highest in drinking groups and non-drinking groups (p<0.05). The reasons for skipping meal were “too busy” in the drinking groups, and “oversleep” in the non-drinking groups (p<0.05). The preference for snacking in drinking groups were milk, milk products, and fast food, with the highest being listed first. The non-drinking groups preferred carbonated drinks and ice cream. The drinking groups need more education about their drinking habits. Drinking groups also need an increased intake of vegetables and fruits.

        The aim of this study is to provide the fundamental information on satisfaction for school food service and dietary habits of middle school students in Sejong Special Self-Governing City. Generally, the subjects had a high satisfaction level for school food service. The boys had comparatively more satisfactory days for school food service than the girls. The most dissatisfactory factors of school food service were the taste and variety of menu for the girls, and the time and place for lunch and the service of employee for the boys. The intersexual differences existed with a significant difference in the irregular intake of meals, the reasons to skip meals, and the eating speed. For the boys, the main reason to skip meals was due to lack of appetite, and for the girls, it was the weight-control. The boys finished each meal within 5~10 min and ate more than the amount the girls eat in general. The main components of breakfast for the subjects were a cooked rice, soup, and side dish in 65.9%, and the frequency of skipping breakfast was high with 32.8%, which was once per week. The favorite snacks for the middle school students were cookies and beverages in 29.4%, instant foods in 24.3%, and hamburger and pizza in 21.4%. The intake frequency of snacks was once or twice per week in 46.5% of the subjects. In addition, the subjects had a very high intake frequency of fastfoods with once or twice per week in 72.7%, and the most favorite fastfood was ramen in 57.7%. The subjects in 45.3% took dairy food every day. In conclusion, the middle school students need nutrition education to improve their eating habit and to increase the frequency of breakfast.

        The purpose of this study was to investigate the effects of eating habits and food preferences on the adoptive behavior of children with intellectual disabilities. Survey questionnaires were distributed to six special education schools located in the Daegu-Kyungbuk area, and data were collected from 552 families and teachers with intellectually disabled students. Identification of eating habits began with a factor analysis, and the results were a five-factor solution. Among the five patterns, factors 1 and 2 were significantly related with behavior problems of intellectually disabled children. Further, food preferences of the children were significantly related with adoptive behavior problems. The findings of this study clearly indicate that eating habits as well as food preferences are important factors in identifying adoptive behavior problems in intellectually disabled children. Based on the findings of this study, similarities and differences in eating habits are discussed, and implications for children are provided.
