        The purpose of this study was to investigate the effects of skate (Raja kenojei) flour on the functional and sensory characteristics of Mandupi. Mandupi samples were prepared with wheat flour along with the addition of different amounts of skate flour, followed by functional measurements and sensory evaluations. According to the amylograph data, the composite skate flour-wheat flour samples had increased gelatinization temperatures with increasing skate flour content; whereas initial viscosity at 95℃, viscosity at 95℃ after 15 minutes, and maximum viscosity were reduced. In terms of color values, L and b values decreased, but the a-value increased with increasing skate flour content. Furthermore, the addition of skate flour increased hardness, springiness, chewiness, and adhesiveness in the samples. Overall, based on sensory evaluations, the Mandupi containing 5% skate flour was preferred over the other samples.

        Physicochemical and sensory properties of sponge cakes using 2 kinds of domestic wheat flour(white flour, whole wheat flour) and imported cake flour were investigated. In the proximate analysis, white flour had higher contents of water and protein compared with those of imported flour. Whole wheat flour had the highest contents of protein, lipid and ash. Regarding the batter, imported flour sample showed lower specific gravity and higher viscosity than those of domestic flour sample, implying that there was more air incorporation and higher batter stability. As a result, imported flour batter produced larger cake compared to that of domestic flour batter. But indexes of symmetry and uniformity showed no significant difference among the samples. In textural analysis using rheometer, cakes with imported flour were softer compared with that with domestic flour. In gumminess and brittleness, cakes with domestic white flour showed the highest value while that with the imported flour showed the lowest value. For the color measurements of cake crumb, no significant difference in DE was found among the samples. Regarding the cross-sections of the cake observed using SEM, imported flour produced cake with smaller and more even air cells compared to that with the domestic flour cake. In sensory evaluation, cakes with the domestic white flour showed the highest moistness value. But there was no significant difference in springiness, firmness, adhesiveness and ease of swallow among the samples. In conclusion, cakes with domestic white flour and whole wheat flour were as good as that with imported cake flour for the sponge cake preparation.

        Polypropylene (PP) composites with wood flour/wax/coupling agent were manufactured by melt compounding and injection molding. The influence of wood flour(WF), wax, and coupling agent on the mechanical and thermal properties of the composites was investigated. The addition of wood flour to neat PP has the higher tensile modulus and strength compared with neat PP. The presence of wax also improved the tensile modulus. At the same loading of PP and WF, the addition of coupling agent highly decreased the tensile modulus, and increased the tensile strength. From thermogravimetric analysis (TGA), the addition of wax improved the thermal stability of the composites in the later stages of degradation. The presence of MAPP and wood flour in turn decreased thermal stabilities of composites. From differential scanning calorimetry analysis (DSC), neither the loading of wax. nor the presence of MAPP has shown significant effect on the thermal transition of composites.

        As a part of enhancing the performance of wood-plastic composites (WPC), polypropylene (PP)/ nanoclay (NC)/ wood flour (WF) nanocomposites were prepared using melt blending and injection molding process to evaluate their thermal stability. Thermogravimetric analysis (TGA) was employed to investigate thermal degradation kinetics of the nanocomposites both dynamic and isothermal conditions. Dynamic scans of the TGA showed an increased thermal stability of the nanocomposites at moderate wood flour concentrations (up to 20 phr, percentage based on hundred percent resin) while it decreased with the addition of 30 phr wood flour. The activation energy (Ea) of thermal degradation of nanocomposites increased when nanoclay was added and the concentration of wood flour increased. Different equations were used to evaluate isothermal degradation kinetics using the rate of thermal degradation of the composites, expressed as weight loss (%) from their isothermal TGA curves. Degradation occurred at faster rate in the initial stages of about 60 min., and then proceeded in a gradual manner. However, nanocomposites with wood flour of 30 phr heated at 300℃ showed a drastic difference in their degradation behavior, and reached almost a complete decomposition after 40 min. of the isothermal heating. The degree of decomposition was greater at higher temperatures, and the residual weight of isothermal degradation of nanocomposites greatly varied from about 10 to 90%, depending on isothermal temperatures. The isothermal degradation of nanocomposites also increased their thermal stability with the addition of 1 phr nanoclay and of wood flour up to 20 phr. But, the degradation of PP100/NC1/MAPP3/WF30 nanocomposites with 30 phr wood flour occurs at a faster rate compared to those of the others, indicating a decrease in their thermal stability.

        The quality characteristics of cookies containing brown rice flour, which has a greater variety of functional components than wheat flour, were studied. The results of the pasting properties shows that the inclusion of brown rice flour to the wheat flour-mixture did not affect the pasting temperature for up to 30% inclusion. The total dietary fiber and total polyphenol content increased and color of the cookies became darker with increasing brown rice flour content. According to the results from TA on texture, the hardness decreased and the crispness increased significantly(p<0.001, p<0.05, respectively) with increasing brown rice flour content. From the acceptance test, the aroma and texture of the cookies with added brown rice flour were significantly(p<0.001) lower than those of the wheat flour cookies. However, the appearance, taste, and overall acceptance of the cookies with added brown rice flour did not differ significantly from those of the wheat flour cookies. According to the results from the sensory evaluation, the savory aroma of the cookie with 30% brown rice flour was significantly strong(p<0.001). The brown rice flavor of the cookies with brown rice flour was significantly stronger(p<0.001) than that of the wheat flour cookie, but there were no significant differences among the cookies with brown rice flour in it. The crispness of the cookies increased significantly(p<0.001) with the inclusion of brown rice flour in the mixture, especially for the mixture with 30% brown rice flour which had the highest value of crispness among the cookies. The graininess and brown color of the cookies increased significantly(p<0.001) with increasing brown rice flour content, especially for the mixture with 30% brown rice flour which had the highest values among the cookies.

        꽃송이버섯은 베타글루칸 함량이 높아 버섯재배자들 사이에서 재배를 희망하는 농가들이 부쩍 늘어나고 있다. 하지만 이에 대한 실용적인 재배법이 확립되지 않아 까다로운 버섯으로 인식하여 재배를 기피하고 있어 본 실험에서는 침엽수 톱밥과 소맥분, 물엿을 이용한 간편하고 경제성 있는 배지조성법을 연구하였다. 톱밥 접종원과 액체 접종원을 사용한 경우의 균사 생장에는 뚜렷한 차이가 없었으며, 4℃에서 1일 동안 저온충격을 주는 방식이 원기 형성을 위하여 가장 좋은 방법으로 생각되었다. 또한 자실체 발생용 최적배지는‘미송+소맥분+옥수수+면실박+10% 물엿 수용액’으로 41%의 회수율을 보였으나,‘ 낙엽송+소맥분+옥수수+면실박+10% 물엿 수용액’에서도 회수율이 37%로 자실체 발생량이 많았다. 또한 회수율과 버섯배지 중량 감소율과의 관계를 보면 회수율이 높을수록 중량감소율이 높아 서로 비례한 것으로 조사되었다.

        This study investigated the feasibility of the bread making process with the mixture of the functional rice flour. The bread was manufactured with 20, 30 or 40% functional rice flour with increasing and wheat flour. Gelatinization characteristics of the rice starch was examined by differential scanning calorimetry(DSC). Coated with soluble dietary fiber rice showed the highest gelatinization enthalphy among functional rices and other functional rices were similar to normal rice. in the viscosity point of view. generally the viscosity related to the addition ratio. The most viscose case was 30% Sangwhang rice but in fermented with monascus ruber rice case, viscosity was low even with 40% case because of the transformation of the starch granules. In sensory evaluation, the highest sensory scores for the uniformity of pore size and flavor were obtained when sangwhang rice flour content was 20%. The textual study was mainly focused on the hardness, cohesiveness, adhesiveness, springiness, chewiness. Textural characteristics of functional rice bread crumb bakedwith 20% coated with soluble dietary fiber rice, 20% sangwhang was low in hardness, chewiness and gumminess. Therefore, Sangwhang rice flour 20%, Monascous ruber 20% and Coated soluble dietary fiber rice 20% were considered to be the most suitable addition ratio for the rice breads.

        고온 처리를 통한 화랑곡나방의 방제효과를 검토하기위하여 제분시설 공간을 이상으로 가온하여 3시간이상을 유지한 후 충태별 사망률(표준오차)을 조사하였다. 가열 처리 후 시설 공간내의 온도는 위치에 따라 차이를 보여 이상이 유지된 시간이 주변부에서는 3시간, 중앙부에서는 11시간이었다. 화랑곡나방의 고온에 대한 내성은 충태에 따라 유의한 차이가 있었다. 성충의 경우 가장 작아 처리 위치에 관계없이 의 사망률을 보였고, 알이 가장커서 위치에 따라 를 보였다. 유충의 사망률은 의 범위에 있었다. 이상의 온도가 11시간 이상 유지된 위치에서도 알의 사망률은 에 이르지 않아 보다 장시간의 처리가 필요함을 보여주었다. 이를 토대로 소규모 제분시설에서의 가열방제에 대해 간략히 논의하였다.

        Flour extraction was analyzed by milling different varieties of wheat with different gaps of break rolls of Buhler automatic laboratory mill MLU-202. Straight flour extraction increased with decrease in the roll gap, which was mainly due to increase in break-related flour extraction, especially the flour from the first break roll. Farina extraction also increased with decrease in the roll gap, which contained a large amount of shorts and relatively small amount of flour. Straight flour extraction of wheat with larger kernel diameter was higher, but their correlation was not significant. Meanwhile, the kernel hardness showed significant (-) correlation with the flour extraction and (+) correlation with the shorts extraction. Consequently, the effect of the break roll gap was significant on the flour extraction, and the kernel hardness influenced the flour extraction more than the kernel diameter.

        탈지대두박을 이용한 isoflavone의 분리 및 정제를 위한 최적 조건을 찾고자 absorption resin인 Amberlite XAD-1180를 사용하여 흡착제 활성화용매의 농도, 흡착된 isoflavone의 용출용매의 농도, 용출용매의 양과 용출속도, 시료와 흡착제의 비율 그리고 수지에 미치는 pH와 ion의 영향을 조사하였다. 수지의 활성화와 용출에는 Amberlite XAD-1180의 경우 methanol 75%로 활성화시켜 ethanol 80%로 용출시키는 경우가 가장 높은 값을 보였으며, 이때 사용하는 absorption resin은 isoflavone 흡착을 위해 사용한 단백질제거 탈지대두박용액양의 약 0.5배로, ethanol의 양은 단백질제거 탈지대두박용액 양의 4배를 사용하여 flow rate 12 mL/min의 경우가 적절한 조건임이 밝혀져 흡착제 사용이 isoflavone 함량을 최고 2~3배까지 향상시키는 결과를 보였다. 이때 분리된 isoflavone의 순도는 최고 40%까지 얻을 수 있었다. pH와 ion의 영향에서는 pH는 5.0, NaCl은 0.25 N 이하에서 isoflavone의 유출량이 높았다.
