        For improved preservation of boiled-dried anchovies, the current preservation method of corrugated-cardboard box packaging and freezing below - 18℃ was compared to the nylon/polyethylene(NY/PE) packaging along with cooling temperature ranging from 5℃ to 10℃ as well as ambient condition for eight months by determining physicochemical quality of stored samples. Lipid oxidation of stored anchovies and their browning increased with storage time. The phenomenon was delayed under the conditions of lower temperature and air-tight packaging. As quality-indicative criteria of stored anchovies, carbonyl value(r=-0.989), browning (r=-0.949) and color a value(r=-0.989), browning(r=-0.965), Hunter's color b value (r=-0.949) and color a value(r=-0.940) showed a highly-negative correlations with organoleptic qualities of the samples. Based on the above results, air-tight packaging in a laminated film and subsequent storage at cooling temperature was found to be a possible alternative to the current freezing-storage of boiled-dried anchovies from the physicochemical point of view.

        김치는 용기에 담아 보관하면서 위에서부터 꺼내 먹고 있어서 실제 김치 맛은 표층김치 맛과 직결된다. 따라서 표층부 김치의 변질을 최소화 할 수 있는 효과적인 방법을 모색하기 위하여 표면마감을 4가지 방법 즉 김치표층에 재래식 누름돌을 놓아 저장한 경우(A), 김치를 PE백에 넣어 봉한 후 표본병에 담아서 저장한 경우(B), 누름돌을 PE-film으로 싼 누름돌을 사용한 경우(C)와 그리고 김치를 표본병에 담고 그 위에 우거지(약 4cm)로 표면을 덮어 마감(D)한 후 각각을 10±5℃에서 60일 동안 저장하면서 표층김치(2~5cm)의 pH값, 금속이온함량, 산막효모의 발생유무, 김치국물의 적색도, 신선미와 씹힘성에 대한 관능검사 및 경도를 조사 비교하였다. 김치국물의 pH값은 저장 직전에 약 6.0이었는데 A, C, D는 저장기간 중 낮아졌다가 높아진 반면 B는 좋은 김치의 최적 pH인 4.0~4.2가 유지되었다. 재래식 누름돌 사용(A)은 Fe함량을 크게 증가(6배 이상)시켰으며, Mn과 Cu가 검출되었다. 김치표면에서의 산막효모는 B를 제외하고 A, C, D 모두에서 번식되었고, 적색도도 B의 경우만 전 저장기간 동안 선명한 적색이 유지되었으며 A 경우는 진한 흑색을, C와 D의 경우는 낮은 적색도를 나타냈다. 기계적 경도 역시 B의 경우를 제외하고는 모두가 심히 감소하였고 신선미와 씹힘성에 대한 관능평가에서도 B의 경우와 A와 C 및 D의 표면마감 방법보다 훨씬 우수(p〈0.01)하게 평가되었다.

        This investigation was undertaken for the purpose of studying the quality and acceptability during storage at room or refrigerator temperature of Yackwa containing waxy rice flour substituted for 0,10,30,50,70% of the wheat flour. The storage periods were 0,15,30 and 45 days. Chemical composition, composition of fatty acids, and value, and peroxide values of Yackwa were measured. Sensory evaluation was done by a panel of 5 judges majoring in food and nutrition. The evaluation was repeated 4 times. Objective evaluation was done by rheometer and color difference meter. Chemical composition of Yackwa were 5.9~6.8% for moisture, 3.43~4.09% for crude protein, 22.35~27.65% for crude fat, 0.27~0.31% for ash, 15.6~18.4% for fructose, 10.6~13.7% for glucose, 0.34~1.0% for sucrose, and 0.79~2.37% for maltose, respectively. Fatty acid contents of Yackwa were 10.54~10.73% for palmitic acid, 4.12~4.18% for stearic acid, 25.8~26.9% for oleic acid, 51.6~52.1% for linoleic acid, and 0.27~0.34% for linolenic acid, respectively. Acid value and peroxide value of Yackwa during storage showed little change. As a result of sensory evaluation for Yackwa made various levels of waxy rice flour, there were no significant differences in most of characteristics between the samples supplemented with waxy rice flour to 30% of wheat flour at 0.01% level. By the color difference meter, the value of L (lightness) and b (yellowness) were increased by increasing the amounts of waxy rice flour, however, there were no significant differences at 0.1% level between the samples supplemented with waxy rice flour to 30% of wheat flour, on the other hand, the value of a (redness) was decreased by increasing the amount of waxy rice flour. In the textural characteristics, brittleness, and chewiness were increased by increasing the amounts of waxy rice flour, and by lengthening the storage period, on the other hand, resilience and cohesiveness showed vice versa. In the correlation coefficient between sensory characteristics and mechanical characteristics, overall acceptability in sensory evaluation correlated significantly with cohesiveness, chewiness, and the values of L, a, and b in mechanical test in most of samples(p〈0.001).

        고농도의 탄산가스를 단기간 처리한 딸기를 0.06mm 폴리에틸렌 필름으로 포장저장하는 동안 포장내부의 기체조성, 중량감소율 및 부패율, 과육의 경도 및 과피의 색도등의 변화를 측정한 결과를 요약하면 다음과 같다. 저장중 포장내부의 기체조성은 저장초기에 급격히 변화하다가 저장14일 이후에는 산소농도 1~2%, 탄산가스농도 8~9%를 유지하였다. 무포장구의 중량감소율은 저장말기까지 12% 정도였으나 포장구는 약 2%정도의 중량감소율을 보였으며 탄산가스처리에 의해 부패율의 증가가 크게 억제되었다. pH는 다소 증가한 반면 적정산도는 약간 감소하였으며 당도는 탄산가스처리 및 포장에 의해 감소가 비교적 작게 나타났다. 과육의 경도는 탄산가스 처리에 의하여 저장14일까지 크게 증가되었으며 과피의 a값 역시 탄산가스 처리 및 포장에 의해 그 감소가 억제되었다. ascorbic acid의 함량은 저장 14일까지는 무포장구가 높았으나 그 이후는 포장구에서 높게 나타났다.

        Lentinula edodes mushrooms cultivated under different relative humidities were wrapped at 4℃ and the results of storage characteristics were investigated. Changes in water content of fruiting bodies during the storage period showed the highest water content in fruit bodies harvested from the treatment with the highest relative humidity. The luminosity of the fresh fruiting bodies showed no significant change during the storage period, and the redness was higher in the relative humidity 95% treatment than in the other treatments. According to this study, the relative humidity of the pileus was 65%, and the content of Ergosterol was 0.67 ± 15 g / L at relative humidity of 65%, 80% and 95%. In addition, amino acid analysis and Principal Component Analysis (PCA) confirmed that methionine was the main cause of changes in storage time and relative humidity.

        양송이 유통에 적합한 필름 포장방법 연구를 위해 저장온도 및 필름 산소투과도에 따른 양송이 품질변화를 분석하였다. 실험에 이용된 필름은 PVC와 OPP(OTR 1,000, 6,000, 10,000, 20,000 mL/m2/day/atm)이고 저장 온도는 4, 8, 12, 20℃로 설정하였다. 분석 결과, 중량감소율은 대조구, PVC, OPP 순으로 높았다. 갓 개열은 온도 별로 결과가 다르게 나타나 8℃ 이상에서 필름 처리구의 갓 개열 억제 효과가 나타났고 12℃에서는 필름 내부의 산소 농도가 낮을수록 억제 효과가 높은 경향이었다. 필름 중 OPP20000은 20℃에서 갓 개열 억제 효과가 나타나지 않았다. 대 신장은 모든 온도에서 전반적으로 필름 처리구가 대조구에 비해 억제되었으나 예외적으로 OPP20000은 대 신장이 대조구보다 오히려 촉진되는 결과였다. 조직의 경도는 필름 중 OPP1000이 다른 처리구에 비해 유의하게 높았다. 버섯의 내외부 색도는 모두 OPP 필름의 버섯이 대조구와 PVC에 비해 색 변화가 큰 경향이었다. 전반적으로 OPP는 중량감소, 갓 개열, 대 신장, 조직 경도에서 대조구에 비해 품질이 유지되는 효과가 있었으나 온도 및 산소투과도에 따라 효과의 차이가 있었고 OPP20000은 조직 생장 억제와 관련된 효과가 나타나지 않았다. OPP1000과 OPP6000은 OPP 중 조직 생장 억제에 가장 효과적이었으나 내부 단면에서 조직손상 및 수침 현상과 같은 장해가 나타났다. 한편 PVC 필름은 중량감소, 갓 개열, 대 신장이 대조구에 비해 변화가 적었고 내외부 갈변은 OPP보다 변화가 적어 전반적인 품질변화가 적은 것으로 분석되었다.

        The main goal of this work was to investigate changes in microbiological quality and dominant bacterial communities present in minimally processed Platycodi radix (Doraji) under vacuum packaging during cold storage using matirix-assisted laser desorption/ionization time of flight (MALDI-TOF) mass spectrometry fingerprinting. Microbiological analysis of raw Platycodi radix throughout the manufacturing process highlighted the presence of high numbers of total viable cells both before and after storage. Further, the dominant bacterial communities changed during processing and storage, with greater richness detected in Enterobacteriaceae; specifically, Serratia fonticola and Rahnella aquatilis became abundant in Platycodi radix after processing. During storage at 5 and 15℃, the quality diminished and the relative abundance of Leuconostoc spp. increased; Leuconostoc pseudomesenteroides and Leuconostoc citreum were the main bacterial communities in decayed Platycodi radix at the end of storage. Microorganisms present in Platycodi radix products during processing and storage are potentially involved in deterioration. The identification of dominant bacteria can be helpful in the effective establishment of packaging and storage conditions to prolong the freshness of minimally processed Platycodi radix products.

        The purpose of this study was to evaluate the quality of fresh-cut lettuce after a washing treatment with aqueous thyme extracts of differing concentration. Four different concentrations of thyme extract were employed: 0.001% (w/v, TEA), 0.005% (w/v, TEB), 0.01% (w/v, TEC), 0.05% (w/v, TED), while distilled water was used as a control. Measurements of O2 concentration, CO2 concentration, total aerobic bacteria, CIE L*, a*, b*, browning index, total phenolic contents and enzymatic activities were investigated on day 0, 1, 3, 5, and 7 at 10 . The O2 concentration in TEB were higher than those in other samples during storage, and the CO2 concentration in TEB and TEC were significantly lower than in other samples on day 7. There was no significant difference in the total aerobic bacteria counts between treatments (p<0.05). The samples treated with TEB and TEC showed higher L* (lightness) values, but lower browning indexes, total phenolic compound levels, and enzymatic activities (polyphenol oxidase, peroxidase) than other samples during storage. Specifically, on day 7, the browning index of Cont reached 0.25, while those in the TEB and TEC were about 0.15. The L* in Cont decreased from 69.50 to 58.92, while TEB and TEC were values of 65.61 and 63.20, respectively. These results reveal that 0.005-0.01% thyme extract was effective as a washing treatment inhibited the browning of fresh-cut lettuce and is thus expected to be a useful natural extract for maintaining the quality of fresh-cut lettuce.

        Background : The purpose to improved the quality of oriental medicinal herbs, contribute to the enlargement of farm’s income. The study is investigated the effect of high-quality stabilized production and reasonable drying methods, different storage conditions and package mediums for established GAP guide book in Angelica acutiloba Siebold & Zucc. Methods and Results : Loss rate of drying method checked into 2 treatment, natural drying (218 hr. by sunshine) and heating dryer for 24 - 53 hr with Angelica acutiloba root of two years. After cleaning, first drying days by temperature, After cutting, second drying days by temperature under 40℃, 50℃ and 60℃. Changes hunter color values and quality by different storage conditions 2 treatment were normal temperature by indoor 20℃ and low temperature under refrigerating, 4℃. Storage period for 60 days, 120 days and 180 days with package 3 mediums under PE (polyethylene package), PP (polypropylene gunny sack) and WP (woven net package). Conclusion : After first cleaning, reasonable hot air drying method in Angelica acutiloba root. Secondary drying oven after cutting, the temperature regulated in 40℃ and 50℃, the lowest loss rates. Packing material storage conditions are dry roots in the colorimetry that maintained at room temperature storage than PP packaging, cold storage for long-term stability to PE treatment.

        The purpose of this study is to present the results as basic data for establishing proper storage conditions and distribution conditions of actual farms at point of increasing concern about hygiene and palatabiltiy of consumers to food. In this study, three farmhouses of dried persimmons prepared using different storage conditions were selected in Sangju (Korea). The dried persimmons were stored for 90 days. Changes in temperature and humidity were measured with a temperature and humidity recorder under each storage condition, and physicochemical analysis and sensory evaluation were performed. The average temperatures of farmhouse A, B and C were approximately -22--23℃, -19--18℃ and -25℃ respectively. The humidities of A, B and C were 62-63%, 59-60%, and 66-67%, respectively, and the moisture contents of all farmhouses increased during the storage period, with farmhouse B showing the most rapid increase. Free sugars increased, except for those from farmhouse C. Persimmons from farmhouse B showed the greatest changes in chewiness and hardness. The values of a* and b* were significantly decreased in persimmons from farmhouse B, and the color difference value of farmhouse B was dramatically increased. Sensory evaluation showed that the color preference tended to decrease compared with the initial value. Only farmhouse B showed decreased overall acceptability. Moreover, farmhouse B had the highest storage temperature and lowest humidity. Therefore, our results showed that storage at a low temperature and high humidity was important for manufacturing high-quality dried persimmons.

        파프리카는 우리나라의 대표적인 수출작물로 알려져 있지만 장거리 유통 중 일어나는 품질열화로 인해 상품적 가치가 감소되는 문제가 있다. 따라서 본 연구는 농산물 유통 시 주로 사용되는 골판지상자의 내부에 알루미늄을 코팅하여 기능성을 부여한 포장용기를 개발하였으며, 이를 이용하여 파프리카를 포장하여 저장 중 선도유지 및 품질특 성에 미치는 영향을 알아보았다. 골판지상자 내부에 알루 미늄을 코팅함으로써 방습성을 향상시키고 기체투과도를 저하시킴으로써 포장된 파프리카의 펙틴분해효소 활성이 저하됨에 따라 파프리카의 중량변화율과 조직연화 현상이 저해되었고, 산화효소 활성이 감소함으로써 총 페놀 함량 및 항산화 활성이 향상되는 것으로 나타났다. 결과적으로 알루미늄 코팅한 골판지상자는 파프리카의 상품성 및 저장성을 향상시키는 포장용기로 이용될 수 있을 것으로 생각되며, 알루미늄박의 내수성, 내한성, 보향성, 내오염성 등의 특성을 활용한 추가연구를 통해 국내 농산물의 장거리 유통 및 수출 활성화에 이바지할 수 있을 것이라 생각된다.
