        This study was performed to investigate antioxidant and anti-inflammatory activities of perilla(Perilla frutescens L.) seed, flower and leaf according to extraction condition. Perilla seed extracts(PSE), perilla flower extracts(PFE), perilla leaf extracts(PLE) was extracted by stirring extraction (STE, 25°C), shaking extraction (SHE, 80°C), and sonication assisted extraction(SAE, , 25°C) with 94% ethanol, 60% ethanol and distilled water, followed by analysis of total polyphenol and flavonoid and testing radical scavenging activities. The highest total polyphenol content (5.47, 9.36, 38.58 mg gallic acid equivalent/g), total flavonoid content(5.77, 8.62, 46.44 mg catechin equivalent/g), ABTS(10.68, 19.46, 63.56 mg trolox equivalent/g) and DPPH(6.51, 7.69, 79.73 mg trolox equivalent/g) radical scavenging activity of PSE, PFE and PLE was observed in the HWE with 60% ethanol,. Among the three extraction method, SHE provided the best results for yield, polyphenol, flavonoid content of perilla seed, flower, leaf in comparison to STE or SAE. SHE with 60% ethanol of perilla seed, flower, leaf more effectively inhibited secretion of nitric oxide(NO) and pro-inflammatory cytokine in RAW 264.7 macrophage exposed to LPS compared to other extraction solvent and method. Therefore, these extracts obtained from perilla seed, flower, leaf could be used antioxidant and anti-inflammatory ingredients in the food industry.

        In this study, the quality of sow pork was compared with commercial pork to evaluate sow pork as raw meat material for processing. Texture, cooking loss, color, pH, water, lipid, fatty acid, volatile profiles, and sensory characteristics of 3 parts (tenderloin, loin, hind leg) of sow and commercial pork were analyzed. In texture analysis, sow pork had significantly higher shear force compared to commercial pork (tenderloin: sow 143.19 N, commercial 107.79 N; loin: sow 173.62 N, commercial 120.65 N; hind leg: sow 211.76 N, commercial 112.80 N) (p<0.05). There were significant differences in cooking loss, color, and pH, but they differed by part. A total of 49 volatile compounds were identified, and there were significant differences in 22 volatile compounds. In the case of hexanal (one of the warmed-over flavors), which was detected on the largest scale, the relative concentration was significantly higher in the tenderloin of commercial pork (p<0.05). On the other hand, no differences were reported by sensory analysis for hardness, off-flavor, juiciness, oiliness, appearance, taste, and acceptability between cooked sow and commercial pork. This study provides a database on the quality of sow pork by parts, which is considerable to develop proceed meat products using sow meat.

        This study investigated the antioxidant characteristics of sweet potato according to different plant parts and drying methods. The sweet potato plant parts were divided into root tubers, stems, stalks, leaves, and tips, and the drying methods were freeze-drying and hot air drying. Total polyphenol and flavonoid contents and radical scavenging activity of the sweet potato plant parts were significantly different depending on the plant parts and drying methods. The total polyphenol content of freeze-dried sweet potato leaves and tips were 52.76 and 46.19 mg chlorogenic acid equivalents/g sample, and the total flavonoid contents were 222.47 and 214.12 mg quercetin equivalents/g sample, respectively, and decreased with hot air drying. DPPH radical scavenging activity was higher in freeze-drying than hot air drying and was significantly different depending on the plant parts. The ABTS radical scavenging activity of freeze-dried sweet potato leaves and tips were 43.48 and 44.68 mg Trolox equivalents/g sample, respectively, and decreased with hot air drying. Therefore, additional studies on the functionality of using by-products from sweet potato cultivation are needed.

        This study was carried out to find out the changes in the growth characteristics and feed value of the three different whole-crop silage rice cultivars of whole-crop silage rice such as Jonong, Yeongwoo and Mogwoo to develop an efficient double cropping system. This study showed that there were significant differences biomass and feed values among cultivars but no clear difference among transplanting dates. Dry weight and height were in order of Mogwoo, Yeongwoo, Jonong (p<0.05). Dry weight and feed value of Jonong showed no significant difference after 21 days after heading (DAH), it was expected to be harvested before DAH 30 days. Yeongwoo showed a lower dry weight than Mogwoo, but heading date was earlier than Mogwoo, so one can expect a higher feed value than Mogwoo. Mogwoo had lower crude protein and total digestible nutrient than the other two cultivars but relative feed value in stem was higher than that of the other cultivars, but had higher dry weight than other cultivars so it was considered to take an advantage as a silage rice. Therefore, the results of this study suggest that the selection of whole-crop silage rice on the cropping system be made comprehensively by considering the heading characteristics of the cultivars and the feed value.

        In this study, we examined antioxidative effects and the anti-adipogenesis effect of different parts of Cudrania tricuspidata (C), and Morus alba (M). Total polyphenol contents were highest in M-root (34.56±0.045 mg GAE/g), and there was no significant difference, between C-root and M-leaf. Total flavonoid contents of C-root were highest (23.07±0.004 mg QE/g). To examine antioxidant activities of C and M extracts, DPPH and ABTS radical scavenging activity, and FRAP assay, was used. Results show that antioxidant activities of C and M extracts increased, in a dose-dependent manner. Adipocytes are generated by preadipocyte differentiation, during adipogenesis. Matured adipocytes accumulate in abnormal and cause obesity. We investigated effects of leaf and root extracts of C and M, on lipid accumulation, in 3T3-L1 adipocytes. Changes in cell morphology, and degrees of lipid accumulation in adipocytes, were evaluated by Oil Red O staining. Root extracts of C and M, reduced lipid content in a dose-dependent manner. Therefore, root extracts of C and M, may be good candidates for managing obesity.

        This study was conducted to investigate the antioxidant activities of extracts from various parts of the pine tree, which is known as a good source of functional food material. While ethanol extraction yields of pine bud and cone were higher than water extraction yields of pine bud and cone, water extraction yield of pine needle was higher than ethanol extraction yield of the pine needle. The content of polyphenols in the pine cone ethanol extract was 5 times higher than that in the pine bud and needle. Further, the content of flavonoids in the pine cone ethanol extract was 8 times higher than that in the pine bud and needle. DPPH radical scavenging effect of the pine cone ethanol extract was 3~5 times higher that of the pine bud and needle extract. Regardless of the extraction solvents, trolox equivalent antioxidant capacity (TEAC) and ferric reducing antioxidant power (FRAP) of the pine cone were stronger than those of the other parts of the pine tree. Taken together, it can be expected that the pine cone can be practically used as an antioxidant substance in food and beauty industries.

        본 연구는 겨울철 파프리카의 안정된 영양생장, 생식 생장을 파악하는 방법으로 간이영양진단기기를 이용해 NO3 - 농도를 신속하게 측정하고 영양상태 파악을 위해 실시되었다. ‘Raon red’, ‘Raon yellow’ 두 품종을 각각 비대기 단계로 나누어 측정한 결과 엽신의 test strip 분 석은 분광광도계를 통한 관행의 방법과 상관성이 인정되었고(R2=0.8628), 엽병의 test strip분석은 엽신 즙액 보다는 낮은 상관성을 보이지만 간접적으로 NO3 - 농도 분석에 유용하였다(R2=0.6734). 착과 그룹이 높아짐에 따라 해당 부위 엽 내 질산태질소 농도가 낮아지는 경향을 보이고 있으며, 동일 시점의 마디별 엽병 즙액 내 질산태질소 농도 역시 정단부로 갈수록 낮아지는 경향이 확인되었다. 엽병 즙액 내 NO3 - 농도 역시 간이진단기기를 활용하여 신속한 모니터링이 가능하였다. 따라서 간이영양진단기기를 사용해 기존 분석방법보다 효과적으로 농가 현장에서 파프리카의 질소 영양상태를 파악할 수 있었으며, 이를 통해 추후 합리적인 양액공급 및 표준영 양범위의 설정이 가능할 것으로 판단된다.

        This study was conducted to investigate the total polyphenol, total flavonoid and the antioxidant activity in different origin and parts of Moringa olerifera cultivated in Cheorwon. The extraction yield from leaf, root and stem were 25.5, 23.0, 12.3%, respectively. The total polyphenol content was high in the leaf extracts (15.77 mg/g) followed by root extracts (11.23 mg/g) and stem extracts (3.50 mg/g) but the difference of origin was not observed. The total flavonoid content was high in the leaf extracts (14.78 mg/g) followed by stem (1.36 mg/g) and root (1.14 mg/g). The total flavonoid content of Philippines and Thailand leaf were statistically high compared to india leaf. The DPPH radical scavenging activity was high in the leaf extracts at the 1 mg/ml, 0.25 mg/ml but the difference of origin was not observed. The DPPH radical scavenging activity may be attributed to the presence of several compounds such as polyphenol and flavonoid. Hence consumption of diet supplemented with Moringa olerifera leaves could protect the human against diseases induced by oxidative stress.

        This study aimed to evaluate the efficacy of the antioxidative and antidiabetic activities of the flowers, leaves, and roots of the Jerusalem artichoke (Helianthus tuberosus L.). The total polyphenol and flavonoid contents of the leaves were higher than those of the flowers and roots. However, the DPPH radical-scavenging and hydroxyl radical-scavenging activities of the flowers were higher than those of the leaves and roots. The nitrite-scavenging ability under acidic conditions was high in Jerusalem artichoke flower extracts. The α-glucosidase inhibitory activity and α-amylase inhibitory activity of a methanol extract of Jerusalem artichoke roots were about 60% (5 mg/mL concentration). Based on these experiments, it can be concluded that the flowers leaves, and roots of the Jerusalem artichoke can be used as natural preservatives. Therefore, they can be developed as functional foods, to take advantage of their antioxidant activity and abundant polyphenols. This study suggests that the whole Jerusalem artichoke, including roots, leaves, and flowers, is useful as a functional, nutritious food product.

        본 연구는 교잡돈의 출하일령은 약 200일 이고, 175두의 돼지를 도축하여 3개의 그룹(59 ~ 95kg, 96 ~ 110kg, 111 ~ 148kg)으로 나누어, 등심, 상완세갈래근, 대퇴두갈래근, 반막모양근의 육질 특성을 조사하였다. 콜라겐과 지방함량은 반막모양근, 대퇴두갈래근이 111 ~ 148kg 그룹에서 다름 그룹에 비 해 낮은 함량을 나타내었으며(p<0.05), 단백질함량은 반막모양근, 대퇴두갈래근과 상완세갈래근이 111 ~ 148kg 그룹에서 다른 그룹에 비해 높은 함량을 나타내었다(p<0.05). 등심과 반막모양근의 명도는 111 ~ 148kg 그룹에서 높게 나타내었으며(p<0.05), 적색도와 황색도는 유의적인 차이가 나타나지 않았 다(p>0.05). pH는 등심에서 체중이 증가함에 따라 낮은 값을 나타냈었다(p<0.05). 가열감량은 등심, 반 막모양근, 대퇴두갈래근, 상완세갈래근이 111 ~ 148kg 그룹에서 보다 59 ~ 95kg 그룹에서 낮게 나타 났으며(p<0.05), 보수력은 반막모양근과 대퇴두갈래근에서 체중이 증가할수록 높게 나타났다(p<0.05). 전단력은 등심과 상완세갈래근에서 체중이 증가할수록 낮게 나타났다(p<0.05). 등심의 지방산 분석 결 과는 96 ~ 110kg 그룹에서 oleic acid, MUFA, MUFA/SFA가 높았고(p<0.05), 111 ~ 148kg 그룹에서 trans-vaccenic acid와 SFA가 높았지만(p<0.05), UFA는 낮았다(p<0.05).등심의 관능평가는 연도와 다 즙성이 96 ~ 110kg 그룹에서 높은 점수를 받았다(p<0.05).

        본 연구는 흰 민들레의 기능성 식의약품 소재로서의 활용 가능성을 탐색하기 위하여, 흰 민들레 꽃, 잎, 뿌리의 부위별 총 폴리페놀, 총 플라보노이드, 항산화 활성 및 암세포에 대 한 세포독성 효과를 분석하였다. 흰 민들레 부위별 에탄올 추 출조건에 따른 추출수율은 꽃, 잎, 뿌리가 각각 32.15±3.21%, 31.63±0.63%, 27.48±2.47%로서, 꽃 > 잎 > 뿌리의 순으로 나 타났다. 흰 민들레 부위별 에탄올 추출물에서의 총 폴리페놀 함량은 꽃 추출물에서 61.29±2.11 mg/g으로 가장 높게 나타 났으며, 그 다음이 잎(43.52±2.34 mg/g), 뿌리(11.36±1.87 mg/g) 순으로 나타났다. 흰 민들레 부위별 에탄올 추출물에서의 총 플라보노이드 함량은 총 폴리페놀 함량과 같은 경향으로 꽃 (46.11±1.88 mg/g), 잎(24.89±1.20 mg/g), 뿌리(6.31±1.22 mg/g) 의 순으로 각각 나타났다. DPPH 라디컬 소거활성으로 분석 한 흰 민들레 부위별 에탄올 추출물의 전자공여능은 추출물 농도 의존적으로 나타났으며, 꽃, 잎 및 뿌리 에탄올 추출물 1.0 mg/mL의 농도에서 각각 89.99±2.83%, 85.29±2.22%, 37.88± 2.34%로 꽃 에탄올 추출물이 가장 높게 나타났다. 이러한 결과는 폴리페놀 및 플라보노이드 함량이 DPPH 라디컬 소거능 과 관련이 있음을 보여주었다. MTT법에 의한 흰 민들레 부 위별 에탄올 추출물 400 mg/kg 첨가시 위암 세포주(AGS), 폐 암 세포주(A-549) 및 대장암 세포주(HCT-116)에 대한 세포독 성 효과를 확인한 결과, 위암 세포주(AGS)에서 꽃(62.85± 4.63%), 잎(47.83±4.22%), 뿌리(4.73±0.89%)의 순으로, 대장암 세포주(HCT-116)에서 꽃(69.89±3.44%), 잎(54.14±2.82%), 뿌 리(9.42±1.11%)의 순으로, 폐암 세포주(A-549)에서 꽃(85.72± 4.17%), 잎(71.79±2.98%), 뿌리(19.10±2.04%)의 순으로 모든 암 세포주들에 대하여 꽃 부위 에탄올 추출물이 가장 높았으 며, 뿌리에서 가장 낮은 것으로 나타났고, 모두 농도 의존적 으로 항암활성이 증가하는 것으로 나타났다. 이와 같은 결과, 국내에서 재배되고 있는 흰 민들레는 향후 기능성 식의약품 소재로서의 이용에 있어 유용한 기초자료로 활용될 수 있을 것으로 기대된다.

        This study compared the nutritional composition and antioxidative activities of different parts (aerial part and root) of Taraxacum coreanum and Taraxacum officinale. To identify the nutrient composition of different parts of Daedelion species, nutrient contents were analyzed. Crude ash, protein, and fat contents of T. coreanum and T. officinale were higher in the aerial part compared to the root. There was no significant difference in crude ash, protein, or carbohydrate content of the aerial part depending on the Daedelion species. Aerial part contents of vitamin A, E, and C were significantly higher in T. coreanum than T. officinale. The K content of the aerial part of T. coreanum and T. officinale was highest, although there was no significant difference among Daedelion species. Contents of oxalic acid, citric acid, and acetic acid in the aerial part of T. coreanum were highest. Contents of total polyphenols, total flavonoids, and DPPH radical scavenging activity of the aerial part were significantly higher in T. coreanum than T. officinale. In conclusion, the aerial part of T. coreanum and T. officinale could be used as antioxidative functional food sources.

        삼채뿌리와 잎이 가진 기능성 식품소재로서의 활용도를 높이고자 다양한 생리활성을 평가하였다. 삼채뿌리의 조사포 닌, 폴리페놀, 플라보노이드 함량은 각각 4.28 mg/g, 18.27 mg/g, 0.95 mg/g, 삼채잎의 조사포닌, 폴리페놀, 플라보노이드 함량 은 각각 4.17mg/g, 35.91 mg/g, 2.79 mg/g으로 나타났다. 삼채뿌리 및 잎 부위의 70% 에탄올 추출물의 DPPH 라디 칼 소거능 IC50으로 23.01 mg/mL, 4.82 mg/mL로 나타났으며, hydroxyl radical 소거능 IC50 값이 각각 40.82 mg/mL, 27.24 mg/mL를 나타났다. α-Amylase 저해 활성은 삼채뿌리 및 잎 부위 에탄올 추출물 10 mg/mL를 처리했을 때 억제활성이 각 각 61.38%, 61.01%로 나타났다. 삼채뿌리 및 잎 부위의 아질 산염 소거능을 측정한 결과, 삼채추출물의 농도가 증가함에 따라 그 활성 역시 증가하는 경향으로 나타났다. 이상의 결과 로 삼채뿌리보다는 삼채잎 부위에 항산화 및 항당뇨 활성이 나타났으며, 삼채잎을 활용한 식품 소재로써 개발할 가치가 매우 높은 것으로 판단된다.

        Burdock (Arctium sp.) is known as a nutraceutical vegetable, especially in Japanese and Korean cuisine. While burdock plants are generally harvested for their tap roots, different parts of the plant are consumed as food or used as traditional medicines. This study investigated the physicochemical properties of the leaves, stems, roots, and peeled roots of the burdock plant based on their pH, soluble solid content, titratable acidity, color values, and mineral content. The pH differed significantly among the different plant parts, with the highest value in the leaves and the lowest in the stems. However, for the soluble solid content, the leaves had the lowest, while the peeled roots had the highest. The titratable acidity of the stems was significantly lower than that of the leaves, roots, and peeled roots. As regards the color values, the lightness value was highest for the stems, while the roots showed the highest redness value, followed by the peeled roots, and the leaves had the highest yellowness value. The leaves and stems contained almost three times more potassium than the roots and peeled roots. Thus, the higher content of different minerals in the leaves and stems of the burdock plant shows that these plant parts could be used as potential sources of dietary minerals.

        본 연구는 도꼬마리의 뿌리와 열매 부위별 항산화 활성의 검증을 통해 유효 생리활성 성분이 많은 부위를 탐색하고자 뿌리와 열매를 메탄올로 추출하여 항산화 활성물질, 라디칼 소거능, in vitro에서 항암 활성을 측정하였다. 항산화 물질인 폴리페놀과 플라보노이드 함량은 뿌리보다는 열매 부위에 6 배 가량 높은 함량이 나타났다. ABTS, DPPH, Hydroxyl radical 소거능을 측정한 결과, 뿌리에서 IC50% 6.02, 1.29, 3.88 ㎎/㎖ 이며, 열매에서는 0.81, 0.16, 0.44 ㎎/㎖로 열매에서 소거능이 높게 나타났다. 항암 활성을 알아보기 위하여 유방암세포 (MCF-7), 위암세포(AGS), 폐암세포(A-549), 인체대장암세포 (HCT-116), 간암세(Hep-G2) 및 전립선암(PC-3)에 처리하여 암세포 성장 억제 정도를 확인한 결과, 도꼬마리 열매와 뿌리 부위에 0.5 ㎎/㎖ 농도에서 각각 26%, 36% 전립선 암세포 성 장 억제 정도를 확인할 수 있었다.
