A specimens of Hippichthys spicifer (Rüppell, 1838) (92.7 mm in standard length) were collected from Jeju Island, Korea on July 19, 2023. The species is well distinguished from Hippichthys heptagonus by the number of trunk rings between the anus and dorsal fin (two in H. spicifer vs one) and the presence of black stripes on the abdomen (present in H. spicifer vs absent). It is also distinguished from Hippichthys penicillus by the direction of the lateral median trunk ridge (deflected in H. spicifer vs. straight). Mitochondrial DNA cytochrome c oxidase subunit I sequences (436 bp) showed a 99.1% match with H. spicifer. As this is the first record of such species in Korea, we suggest a Korean name “Jul-mu-nui-sil-go-gi”.
The present study was conducted to investigate effects of rabbit meat extract on energy metabolism and muscle differentiation in C2C12 myotubes. Water extract of rabbit meat (10, 50, 100, and 200 μg/ml) was used to treat differentiated C2C12 cells. Reverse transcriptase polymerase chain reaction (RT-PCR) and western blot analysis were used to determine mRNA or protein levels of energy metabolism-related genes. Total adenosine triphosphate (ATP) content was also measured. Treatment with rabbit meat extract significantly increased expression levels of muscle differentiation markers (myogenin and myosin heavy chain) and mitochondrial biogenesis regulators (PGC1α, NRF1, and TFAM) in C2C12 myotubes compared to non-treated control. Additionally, rabbit meat extract activated phosphorylation of AMPK and acetyl-coA carboxylase (ACC). Rabbit meat extract significantly increased ATP contents in myotubes. These results suggest that rabbit meat extract has the potential to improve energy metabolism in skeletal muscles.
In this study, hybrid devices were developed to simultaneously remove odor and particulate matter (PM) emitted during meat grilling, and their performance was evaluated. A ceramic filter system and surfactant microbubble plasma system were used to reduce particulate matter. For odor reduction, an electro-oxidation system, an ozone-active catalytic oxidation system, and a multi-adsorption filter system were used. By combining the above particulate matter reduction and odor reduction devices, the reduction efficiency of odor and particulate matter generated during meat grilling was analyzed. As a result, most of the six combined device conditions showed a reduction efficiency of more than 90% for particulate matter. The combined odor also showed a high reduction efficiency of less than 200 times the emission concentration standard. This study also evaluated 22 types of odorous substances, of which ammonia (NH3) and hydrogen sulfide (H2S) showed removal efficiencies of more than 99%. Therefore, it is expected that the combination of these technologies can be used and applied directly to the sites where meat grilling restaurants are located to effectively contribute to the simultaneous reduction of particulate matter and odor.
This study conducted morphological and molecular phylogenetic analyses on three presumed natural interspecific hybrids of the genus Sarcocheilichthys, collected from the main stream of the Seomjin River and its tributary, Dongbokcheon Stream, as well as their parent species, S. nigripinnis morii and S. variegatus wakiyae, to identify whether they are natural hybrids and to determine their maternal and paternal species. The results of the molecular phylogenetic analysis clearly demonstrated that the three presumed natural hybrids are indeed natural hybrids of S. nigripinnis morii and S. variegatus wakiyae, with S. nigripinnis morii identified as the maternal species and S. variegatus wakiyae as the paternal species. The three natural hybrids exhibited intermediate or unique morphological traits that were not biased towards either parent species, and distinct morphological characteristics were observed in the dorsal fin and caudal fin. In the water bodies where the natural hybrids were collected, a variety of Acheilognathinae species and spawning hosts coexisted alongside the parent species S. nigripinnis morii and S. variegatus wakiyae. It is presumed that the overlapping spawning periods and locations of S. nigripinnis morii and S. variegatus wakiyae promoted the occurrence of hybrids. The unidirectional occurrence of natural interspecific hybridization is attributed to interspecific competition and population imbalance, and the sneaker behavior of S. variegatus wakiyae males was proposed as an important mechanism.
Present study investigated fish community at 12 sites within Yudeungcheon Stream in October 2018 and May 2019 to understand the inhabit status of the endangered species Pseudopungtungia nigra. We collected 39 species and 2,554 individuals of fish, and the Fish Assessment Index (FAI) was evaluated as “Good (B)” with an average score of 66.8. Among collected fishes, 15 endemic and 2 invasive species, Micropterus salmoides and Lepomis macrochirus were identified. In the distribution survey of P. nigra, it appeared in a range of approximately 12 km from Maebawiyuwonji Park (St. 5) to Budnaedari Bridge (St. 10). Based on population collected in May, the age of P. nigra (female) were divided into three groups by the length-frequency distribution method: 1 year old (60~76 mm), 2 years old (82~99 mm), and more than 3 years old (100~117 mm). Total length of the minimum maturity individual was 60 mm, and was a 1 year old. The estimated average population size using the Jolly-Seber method was 5,804 individuals in the Suryeongyo Bridge. Our study provides fundamental information about the fish community and River health assessment in Yudeungcheon Stream. Furthermore, we are expected to provide ecological information of the P. nigra, consequently helping to establish conservation and restoration plans for endangered species.
The domestic swine industry is currently facing a threat due to the recent increase in pork imports. This study aims to determine what factors influence consumers' intention to consume imported pork and suggest measures to support the domestic pork industry. To achieve this, we analyzed data from the Korea Rural Economic Institute's Food Consumption Behavior Survey using a binary logistic regression model. The results revealed that a higher intention to consume imported pork is linked to a higher intention to consume imported rice, purchasing meat online, frequent purchases of HMR, and procuring U.S. beef, especially among urban residents. On the other hand, a lower intention to consume imported pork is associated with a higher awareness of animal welfare certification, frequently dining out, and older age. Based on these findings, we propose the following response measures for the domestic swine industry: implementing educational programs, marketing, and advertising specifically targeting urban residents to improve their perception of domestic agricultural products; enhancing price competitiveness through distribution optimization; and developing policies to promote the use of domestic pork as an ingredient in processed foods.
개의 식용을 둘러싼 논쟁은 언론에 보도된 내용을 근거로 할 때 1920년대까지 올라가며, 이는 이 논쟁이 100년 이상을 이어오고 있다는 것을 의미한다. 과거에는 개 식용에 대한 찬반 양론이 대등한 상황이 벌어졌지만, 최근에는 반려동물에 대한 인식이 확산되면서 금지하는 쪽으로 여론이 기울어가는 양상이 나타나고 있다. 국회나 정부 차원에서도 개고기 식용 논란을 정리하고자 하는 시도가 여러 차례 있었지만 그때마다 강한 반대에 부딪혀 결론을 내리지 못해왔다. 현시점에서 개고기 식용을 합법화하기는 쉽지 않아 보이며, 금지하는 방향으로 갈 가능성이 높을 것으로 판단된다. 금지하는 방향으로 법률을 개정할 경우, 농업인 지위를 잃게 되는 개 사육업자에 대한 보상을 포함해 가축으로써의 개와 사육시설 등에 대한 재산상의 보상 문제를 고려해야 한다. 또한 개를 사고파는 상인, 도살 및 가공·포장업자, 개고기를 판매하는 식당 등에 대한 보상 문제도 여전히 남아 있다. 전반적인 상황을 고려할 때 개고기 식용과 관련된 논쟁의 핵심은 법령상의 문제도 있지만 보상 문제가 가장 핵심 쟁점으로 떠오르고 있다고 할 수 있다.
This study was conducted to evaluate in vitro antioxidant activity of goat meat hot water extracts and the changes in apoptosis-related protein expression levels in the cancer cells treated with these extracts. Goat meat hot water extracts were prepared using different cuts of goat meat, including foreleg, hindleg, loin, and rib. Among these extracts, the foreleg and hindleg extracts displayed higher (P<0.05) ABTS radical scavenging activity than the other two extracts. Protein expression levels of BAX, p53, and p21 were not different in the cells treated with the extracts from different cuts, regardless of the cell type. Only p53 expression in HT-29 cells was elevated (P<0.05) after loin extract treatment. These results suggest that antioxidant activity and apoptosis-related effects of goat meat hot water extract varied with cut of meat under in vitro conditions. Because all data was obtained from the in vitro experiment, the ability to generalize conclusions is limited. Additional in vivo studies are necessary.
This study aimed to investigate the effects of Centella asiatica powder on the quality characteristics and storage stability of goat meat Tteokgalbi. The goat meat Tteokgalbi samples were prepared with four different quantities (0, 0.5, 1, and 1.5%) of Centella asiatica powder. The moisture content of the samples containing Centella asiatica powder was significantly lower than that of the control (p<0.05). The protein content of the samples containing Centella asiatica powder was significantly higher than that of the control (p<0.05). As the proportion of Centella asiatica powder increased, the pH, L*, and a* values of the uncooked and cooked samples decreased (p<0.05). The water holding capacity and the cooking yield of the uncooked and cooked samples were higher in the samples containing Centella asiatica powder than in the control (p<0.05). Also, with the increasing amounts of the Centella asiatica powder, the thiobarbituric acid reactive substance (TBARS) levels decreased. The 1-1.5% Centella asiatica powder group showed lower levels of volatile basic nitrogen (VBN) than the other groups as per the assay (p<0.05). The results indicate that Centella asiatica powder could enhance the quality characteristics and storage stability of goat meat Tteokgabi.
This study evaluated the nutritional composition and quality traits of rabbit meat as compared to chicken meat. Samples of loin (M. longissimus dorsi) and breast meats were collected from rabbit and chicken carcasses, respectively. The meats were then analyzed for the proximate composition, collagen and energy contents, fatty acid composition, myoglobin and heme iron contents, pH value, water-holding capacity (WHC), cooking loss, meat color, Warner-Bratzler shear force (WBSF) value, and texture profile. Compared to chicken breast meat, lower (p<0.05) protein content and higher (p<0.05) ash and collagen contents were obtained in rabbit loin meat. Rabbit meat remarkably had higher (p<0.05) total polyunsaturated fatty acids (PUFA) and linolenic acid contents and lower (p<0.05) n-6/n-3 PUFA ratio as compared to chicken meat. The pH value and WHC were lower (p<0.05) in rabbit meat than in chicken meat (p<0.05). Rabbit meat exhibited lower (p<0.05) L* value and higher (p<0.05) a* and b* values compared to chicken meat (p<0.05). The WBSF value, hardness, and gumminess were higher (p<0.05) in rabbit meat than in chicken meat (p<0.05). These findings suggest that rabbit meat has higher essential n-3 PUFA, darker color, and firmer texture as compared to chicken meat.
A newly recorded chaetodontid species, Chaetodon speculum Cuvier, 1831 was collected in July, 2021 from Pohang, Korea. Its body color is yellow with black stripe across the eyes and a large spot occupying one fourth of the upper part of the body. C. speculum is very similar to congeneric species, C. zanzibarensis, but it can be distinguished by the size of the spot, shape of the lateral line, number of longitudinal line scales and geographic distribution. C. speculum is readily identified between post-larval stage and adult stage because of its similar external shape. Molecular analysis based on mitochondrial DNA COI sequences showed our specimen perfectly matched C. speculum. Therefore, we propose the new Korean name, “Heug-jeom-na-bi-go-gi” for C. speculum.
A single specimen of Chaetodon vagabundus Linnaeus, 1758 belonging to the family Chaetodontidae was collected on September 8, 2013 in Yerae-dong, Seogwipo-si, Jeju Island, Korea. The morphological characteristics of C. vagabundus are similar to C. auriga and C. auripes in having dark vertical stripes cross the eye, but differs from C. auriga, which has high dorsal fin extended between spine and soft rays without concavity and has blotch of circle in dorsal fin, and from C. auripes which has yellow body, big of eye proportion and a black stripe along the caudal peduncle during the immature stage. C. vagabundus has eye-like black spots on dorsal fin and black vertical stripe extended from the anterior dorsal soft ray to the middle of the anal fin along the caudal peduncle. Molecular analysis results showed that our specimen perfectly matched C. vagabundus in the mitochondrial DNA COI sequences. Therefore, we use the Korean name, “Hwang-jul-na-bi-go-gi” for C. vagabundus proposed by Kim et al. (2020).
본 연구는 국내 식생활의 기본적인 구성식단 중 하나인 고기류, 곡류, 그리고 면류에 함유되어 있는 수용성 비타민 B군(B1, B2, B3, B7)을 조사하였다. 본 연구에서 확인된 고기류의 B1은 0.039-0.295 mg/100 g의 범위를 나타내었고, B2는 0.029-0.327 mg/100 g의 범위를 나타내었다. B3는 0.158-3.183 mg/100 g의 범위를 나타내었고, B7은 0.812- 2.588 μg/100 g의 범위를 나타내었다. 곡류의 경우 B1은 0.069-0.097 mg/100 g의 범위를 나타내었고 B2는 0.008- 0.100 mg/100 g의 범위를 나타내었다. B3는 0.092-0.709 mg/ 100 g의 범위를 나타내었고, B7은 0.814-8.918 μg/100 g의 범위를 나타내었다. 면류의 경우 B1은 0.057-0.128 mg/100 g의 범위를 나타내었고, B2는 0.008-0.048 mg/100 g의 범위를 나타내었다. B3는 0.022-6.537 mg/100 g의 범위를 나타내었고, B7은 0.474-3.067 μg/100 g의 범위를 나타내었다. 본 연구에서 확인된 고기류, 곡류, 그리고 면류에 수용성 비타민 함량은 영양성분 기초 데이터베이스 구축 연구로써 이용될 수 있다고 생각된다.
This study investigated the effect of the addition of various levels of pig head meat (HM) as a substitute for rear leg meat (RLM) on the physico-chemical quality characteristics of non-emulsified, smoked, and cooked sausage during refrigerated storage. Sausages were prepared in four variations according to the proportion (0%, 10%, 20%, or 30%) of HM added and maintained at 4°C. Quality measurements were taken for 28 days. The sausages added with the addition of 20% and 30% HM had significantly (p<0.05) higher moisture and lower protein content compared to those without the addition of HM. The pH value during the storage period was higher (p<0.05) in the sausages to which the HM had been added than in those without HM. The sausages with 30% HM showed the lowest (p<0.05) L* and b* values and the highest (p<0.05) a* value during the storage period. The 2-thiobarbituric acid reactive substances (TBARS) content, hardness, cohesiveness, springiness, gumminess, and chewiness of the sausages showed no significant variations with the addition of various levels of HM. These data suggest that RLM could be substituted with 30% HM because it does not negatively affect the quality of the non-emulsified sausage. However, a further study on sausages made with 100% HM instead of RLM may be needed to improve its utilization.
文化는 사회의 발전을 이끄는 ‘소프트 파워’라고 일컬어지지만 물질적 토대와 정치적 변화로부터 온전히 홀로 설 수 없다. 中國 宋代 목축업과 조리기술의 발달은 양고기를 중심으로 한 독특한 육식문화를 만들어내었고, 이는 신분과 계급의 상승이라 는 무거운 상징성을 가지게 되었다. 이에 반해, 돼지고기는 저급한 식재료에서 식문화의 중요한 위치로 점차 받아들여져 신분·지역을 아우르는 문화우월감의 상징이 되었다. 본 논문은 宋代 육식문화의 발달과정을 문헌에서부터 살펴보고, 이를 통해 당시 육고기에 대한 인식 변화와 문화 상징성을 고찰한 것이다.
본 연구는 천연 기능성 소재인 비파잎의 첨가가 흑염소고기 저지방 소시지의 품질특성 및 항산화 활성에 미치는 영향을 알아보기 위하여 실시하였다. 20% 지방을 첨가한 대조구(control), 10% 지방을 첨가한 처리구(LF), 10% 지방과 0.25% 비파잎분말을 첨가한 처리구(LL)로 처리하였다. 저지방 소시지인 LF, LL은 대조구보다 지방함량은 낮고, 수분과 단백질 함량은 높았고, 보수력도 향상되었다(p<0.05). 육색의 경우 비파잎을 첨가한 LL은 적색도와 황색도가 감소하였고(p<0.05), TPA에서 탄력성, 검성, 씹힘성 및 응집성은 LF보다 증가하였고, 대조구와 유사한 조직감을 갖는 것으로 나타났다(p<0.05). TBARS와 DPPH radical 소거능은 비파잎을 첨가한 LL에서 우수한 항산화 활성을 나타냈다. 따라서 기능성 소재인 비파잎을 첨가한 흑염소고기 저지방 소시지는 고단백, 저지방 특성의 흑염소고기 섭취 기회를 늘려줌과 동시에 건강 지향적 육제품 개발의 기초자료로 활용될 수 있다.
