This study aimed to investigate the changes in nutritional components of six domestically bred soybean cultivars before and after fermentation with Rhizopus oligosporus. Analysis of five vitamins and minerals showed that levels of vitamin B2, vitamin B3, phosphorus, and calcium increased in all cultivars following fermentation, with notable variations among the cultivars. Specifically, the vitamin B2 content in Daepung and Daewonkong increase significantly, by 6.8-fold and 6.7-fold, respectively, compared to pre-fermentation levels. Additionally, Danbaekkong exhibited the highest calcium content after fermentation, at 3.90 mg/g. Before fermentation, soybean oligosaccharides contained 3.4 to 9.0 times more stachyose than raffinose; however, these levels decreased by over 80% across all cultivars after fermentation with Rhizopus oligosporus. The total dietary fiber content rose from 9.28%~11.32% before fermentation to 12.57%~14.86% afterward, though no significant differences were observed among the cultivars. This study confirms that fermentation with Rhizopus oligosporus enhances the nutritional value of domestically bred soybeans, particularly regarding vitamin B2, vitamin B3, calcium, phosphorus, oligosaccharides, and total dietary fiber.
국내 수박(Citrullus lanatus) 품종의 발아율에 대한 Solid Matrix Priming(SMP)의 영향을 평가하였다. Micro cel-E가 SMP 처리에 가장 이상적인 matrix로 밝혀졌으며, 종자:matix:물의 비율은 10:5:10(w/w/w)로, 25°C 에서 3일 동안 처리했을 때 유근의 돌출없이 발아속도가 촉진되었다. SMP 처리 과정 동안 초기 4시간 동안의 수분 흡수율은 급격하게 증가했으며, 이후 72시간 동안은 더 느린 속도로 흡수되었고, 처리 마지막 시간까지 수분 흡수 율은 41%이었다. 발아 온도와 상관없이, SMP 처리된 종자는 발아 시간이 단축되면서 발아율이 향상되었다. 특히, 최적 발아 온도보다 낮은 온도에서 발아율이 높았다. 품종별 차이는 있었으나, 특히 ‘해찬꿀’과 ‘리코스위트’ 품종 에서 발아율이 유의미하게 증가하였다. 또한 일부 품종에서 SMP 처리 종자의 유묘출현율과 초장, 생체중이 무처 리에 비하여 증가한 값을 보였으며, SMP 처리로 종자의 발아속도 및 유묘활력을 증진시켜 우량 묘 확보가 가능한 것으로 판단되었다.
Soybean (Glycine max L.) is one of the most important food crops in Korea and a crucial source of protein. However, soybean production is significantly impacted by various plant pathogens, including insect pests, plant-parasitic fungi, bacteria, and nematodes. The soybean cyst nematode (SCN), Heterodera glycines, is a major plant-parasitic nematode that causes an estimated annual loss of US$29 million in Korean soybean industry. Cultivating SCN-resistant soybean cultivars is considered the most effective method for managing this nematode. To identify such cultivars, we conducted resistance screening tests for 32 soybean cultivars. No resistant cultivar was found. Daewang cultivar exhibited moderate resistance to SCN, while the other 31 were susceptible. These findings suggest that Daewang is currently the best choice for fields infested with SCN. There is a critical need for developing SCN-resistant soybean cultivars in Korea.
The leaves and stalks of sweet potato have attracted considerable interest as a health food due to numerous studies reporting the presence of functional compounds and various physiological activities. This study analyzed the functional components in the aerial parts of six domestically developed sweet potato cultivars and compared their antioxidant activities. The total polyphenol content, total flavonoid content, and total phenolic acid content ranged from 76.9 to 148.6 mg GAE/g, 3.98 to 11.90 mg CE/g, and 44.19 to 93.56 mg/100 g, respectively. Among the cultivars examined, 'Gogeonmi' and 'Tongchaeru' exhibited high levels of these compounds, and their DPPH and ABTS radical scavenging activities were superior to those of the other cultivars. The GABA content ranged from 0.59 to 2.55 mg/g, with 'Tongchaeru' and 'Jinhongmi' showing the highest levels. Lutein content ranged from 0.10 to 0.24 mg/g, with 'Tongchaeru' reaching its maximum concentration 90 days post-cultivation. Extracts from 'Tongchaeru' significantly inhibited the secretion of interleukin-6 (IL-6) inflammatory cytokines, with the water extract demonstrating a stronger effect than the pretanol extract. These findings suggest that the aerial parts of sweet potato could serve as excellent functional vegetables and bioactive ingredients for health food applications.
This study assessed dried vegetables derived from sweet potato petioles to promote the use of typically discarded aerial parts. The length (18.25 to 35.00 cm) and thickness (4.59 to 6.66 mm) of the petioles varied by variety, with ‘Hophungmi’ and ‘Tongchaeru’ showing promise for dried vegetable processing due to their longer and thicker petioles. In terms of color, ‘Hophungmi’ and ‘Shinmi’ exhibited high lightness, ‘Tongchaeru’ and ‘Hayangmi’ displayed strong redness, and ‘Pungwonmi’ had high yellowness. Rehydration rates and hardness increased over the harvest period, with ‘Pungwonmi’ and ‘Tongchaeru’ demonstrating excellent rehydration capacity. Additionally, ‘Hayangmi,’ ‘Shinmi,’ ‘Tongchaeru,’ and ‘Hophungmi’ maintained lower hardness levels, appealing to consumers who prefer a softer texture. Notably, the substantial polyphenol content (10.70 to 16.20 mg GAE/g) and flavonoid content (4.79 to 8.11 mg CE/g), along with antioxidant activity (DPPH: 1.11 to 2.14 mg, ABTS: 5.51 to 7.78 mg TE/g), indicate their potential as antioxidant-rich functional foods. This research supports the development of dried vegetable products tailored to consumer preferences.
Rapeseed (Brassica napus L.) oil is mostly refined oil (RO). However, with increasing interest in health, the consumption of cold-pressed oil (CPO) without chemical refining is increasing in Korea. In this study, quality characteristics of CPO from rapeseed varieties ‘Jungmo7001’, ‘Jungmo7002’, ‘Jungmo7003’,and ‘Yuryeo’were evaluated and compared with RO, a commercial product. L-value and a-value were lower while b-value was significantly higher for CPO than those for RO. Analysis of fatty acid compositions of each oil revealed that CPO from ‘Yuryeo’contained the highest oleic acid at 74%. Analyses of contents of bioactive compounds in CPOs and RO revealed that contents of tocopherol, β-carotene, and canolol were the highest in CPOs from ‘Jungmo7003’, ‘Jungmo7002’, and ‘Jungmo7001’at 55.5, 0.3, and 0.2 mg/100 g, respectively. In addition, CPOs contained higher contents of bioactive compounds than RO, suggesting that CPO could provide health benefits. The induction period of CPOs measured using Rancimat were 9∼52% longer than that for RO, indicating that CPOs had a higher oxidative stability under given conditions. These results could be used to obtain basic data on quality of domestic rapeseed varieties.
Mulberry fruit is a superior source of polyphenols, especially anthocyanin, and has a long history of use as an edible fruit and traditional medicine. The anthocyanin composition of mulberry fruit from 15 Korean cultivars was analyzed by ultra-performance liquid chromatography diode array detector with quadrupole time of flight/mass spectrometry (UPLC-DAD-QToF/MS) based on a cyanin internal standard. The four glycosides were identified by comparison with authentic standards and published reports. The major anthocyanin was cyanidin 3-O-glucoside (71.7%), followed by cyanidin 3-O-rutinoside (26.6%). The minor components (total of 1.7%) were pelargonidin 3-O-glucoside and pelargonidin 3-O-rutinoside. The total anthocyanin content (mg/100 g, dry weight) of mulberry fruit varied by cultivar and ranged from 471.5±4.0 (Su Hong) to 4,700.2±54.0 (Gwa Sang2). Among the 15 cultivars examined, Gwa Sang2 showed the highest level of cyanidin 3-O-glucoside (3,133.4±32.6), which was 9-fold higher than that of Su Hong (351.5±3.4). In conclusion, anthocyanin profiles, including pelargonidin 3-O-glucoside and pelargonidin 3-O-rutinoside, were reported for the first time from 15 Korean mulberry fruit cultivars. The results will contribute valuable information on pharmaceutical properties, breeding superior mulberry cultivars, and food industries.
To harvest marketable cucumbers, high quality seedlings must be used. Producing seedlings in the greenhouse during the low radiation period decreases marketability due to insufficient light for growth. Supplemental lighting with artificial light of different quality can be used to improve low light conditions and produce high quality seedlings. Therefore, this study was conducted to select the appropriate supplemental light sources on the growth and seedling quality of grafted cucumber seedlings during the low radiation period. Three cultivars of cucumber were used as scions for grafting; ‘NakWonSeongcheongjang’, ‘Sinsedae’, and ‘Goodmorning baekdadagi’. Figleaf gourd (Cucurbita ficifolia) ‘Heukjong’ was used as the rootstock. The seeds were sown on January 26, 2023, and grafted on February 9, 2023. After graft-taking, cucumbers in plug trays were treated with RB light-emitting diodes (LED, red and blue LED, red:blue = 8:2), W LED (white LED, R:G:B = 5:3:2), and HPS (high-pressure sodium lamp), respectively. Non-treatment was used as the control. Supplemental lighting was applied 2 hours before sunrise and 2 hours after sunset for 19 days. The stem diameter and fresh and dry weights of roots did not differ significantly by supplemental light sources. The plant height and hypocotyl length were decreased in W LED. However, the leaf length, leaf width, leaf area, and fresh and dry weights of shoots were the highest in the RB LED. Seedling qualities such as crop growth rate, net assimilation rate, and compactness were also increased in RB LED and W LED. After transplanting, most of the growth was not significant, but early yield of cucumber was higher in LED than non-treatment. In conclusion, using RB LED, W LED for supplemental light source during low radiation period in grafted cucumber seedlings improved growth, seedling quality, and early yield of cucumber.
In this study, the characteristics and taste components of six different oyster mushroom cultivars (Gonji-7ho, Santari, Baekseon, Chunchu, Suhan, and Heuktari) were analyzed and compared. The Heuktari mushroom pileus had the lowest brightness index (32.8) and remained dark (brightness index: 30.5) even after blanching. The moisture content of the mushrooms was approximately 90%. The salinity and sugar contents were highest in Heuktari (5.7% and 7.1%, respectively). Gonji -7ho had the highest contraction rates, with a length contraction rate of 16.4% and thickness contraction rate of 23.9%. The total amino acid content was highest in Heuktari (537.8 mg/100 g), but the glutamine content contributing to umami taste was highest in Santari (59.4 mg/100 g) and the aspartic acid content was highest in Baekseon (33.1 mg/100 g). Among the 5?-nucleotide components, guanosine monophosphate, which enhances umami taste, was highest in Baekseon (0.7 mg/g). Baekseon was also calculated to have the highest umami taste concentration based on amino acid and nucleic acid contents (12.7 g/100 g). The results of this study serve as valuable basic data on the physicochemical characteristics of oyster mushroom cultivars grown in Korea.
This study aims to select eggplant cultivars adaptive to the hot temperature period greenhouse climate by water consumption, and growth performance of plants and fruits of different European eggplant cultivars, including ‘Bartok (BA)’, ‘Bowie (BO)’, ‘Black Pearl (BP)’, ‘Ishbilia (I)’, ‘Mabel (M)’, ‘Vestale (VE)’ and ‘Velia (VL)’, in substrate hydroponic cultivation under hot and humid greenhouse conditions. On the 118 DAT, the leaf number and stem dry weight were highest in ‘VL’, followed by ‘M’, and there was no significant difference in leaf dry weight among cultivars. The marketable fruit number per plant was 16.4 for ‘M’, which was higher than other cultivars, and ‘VE’ and ‘VL’ were 8.5 and 8.8, respectively. The weight per fruit was low for ‘M’ at 136 g, and the highest in ‘VE’ and ‘VL’ at 332 and 281 g, respectively. There was no significant difference in fruit production per plant. In this study, ‘M’, which has high water use efficiency and a large number of fruits, and ‘VL’, which required less quantity to water consumption for producing 200 g of fruit and had a high product weight, will have excellent adaptability in the UAE greenhouse condition.
This study compares the quality characteristics of Jeung-pyun prepared by supplementing with rice mash of various cultivars. Results showed high contents of crude protein and crude ash in Saeilmi. The highest and lowest amylose contents were obtained in Goami4 and Baekjinju, respectively. Saeilmi had the highest water absorption index (WAI) of rice flour, whereas the highest water-soluble index (WSI) was obtained in Baekokchal. Maximum viscosity, minimum viscosity, and breakdown were high in Baekjinju, and high cooling viscosity and setback levels were determined in Goami4. The sugar content, total free sugar, and pH of the rice mash were highest in Baekjinju. The highest volume of Jeung-pyun was obtained with Saeilmi supplementation, whereas the specific volume was highest in Baekokchal. Evaluation of L, a, and b color values of Jeung-pyun revealed the maximum L value in Saeilmi, a value in Goami4, and b value in Baekjinju. The physical properties of Jeung-pyun were lower in all supplemented groups compared to the control group for hardness, adhesiveness, and chewiness. The lowest chewiness was obtained in Baekokchal-supplemented Jeung-pyun. We conclude that supplementation with different varieties of rice affects the quality characteristics of Jeung-pyun, which are important factors for manufacturing processed foods.
In vitro digestibility and protein digestibility corrected amino acid scores (PDCAAS) were investigated to verify the availability of protein in various Rhizopus oligosporus fermented products of domestic soybean (Glycine max L.) cultivars. Danbaegkong (DBK), Daepung (DP), Daewonkong (DWK), Saedanbaek (SDB), Seonyu (SY), and Cheongja4ho (CJ4) were used as raw samples, which were fermented using commercially available Rhizopus oligosporus for 48 h. All cultivars showed increased crude protein content after fermentation. The crude protein content of DBK and SDB was significantly higher than that of the other samples (55.12% in DBK and 54.22% in SDB) (p<0.001). CJ4 had the highest alanine content of 28.88 mg/g (p<0.001), and no significant difference in cysteine content was detected among the cultivars. In most of the fermented samples, the in vitro digestibility was 0.9 or higher, indicating high protein in the fermented samples. However, it is considered that restrictions on digestion are low. In DWK, the amino acid content and PDCAAS, which together indicate protein quality, were 0.917 and 0.855, respectively, confirming that it was the best cultivar to provide the raw material for fermentation. In conclusion Rhizopus oligosporus fermented soybean products can be considered a prospective source of protein with high utility value.
The purpose of this study was to investigate the Maillard reaction–related physicochemical properties of three maize varieties (Kwangpyeongok, Sinhwangok2ho and Gangdaok) after roasting them for different times (0, 15, 25, 40, and 55 minutes). The Maillard reaction is a non-enzymatic browning reaction involving reducing sugars and amino compounds. The content of reducing sugar, the causative agent of the Maillard reaction, decreased as roasting time increased. Gangdaok showed the lowest reducing sugar content of 1.04 mg/g after 55 minutes of roasting. In the elapsed roasting time, chromaticity ‘L’ and ‘b’ values decreased. At 55 minutes of roasting, wherein the Maillard reaction occurred most actively, Gangdaok showed the lowest ‘L’ value of 56.37 and the highest ‘a’ value of 7.60. Gangdaok had superior conditions for inducing the Maillard reaction compared to other varieties, and it is consider that 'flint–type', an endosperm characteristic, may have been the influencing agent. This study detected a total of 52 types of volatile aroma compounds (VACs), of which 28 were produced after roasting. Of the total VACs detected, 2-Formyl-5-methylfuran and 2-Furancarboxaldehyde accounted for 43.8~45.5% and have been confirmed to be the major VACs present in roasted maize. Most of the correlations between the Maillard reaction–related characteristics showed high correlation coefficients.
This study was conducted to evaluate the productivity of whole crop silage wheat utilizing the paddy fields during a couple of years from 2019 to 2021 in Suwon, Korea. This investigation was used the two maturity types of wheat cultivar ‘Cheongwoo’ (early) and ‘Taeu’ (late). The heading date of 2nd year (Oct. 2020 to May. 2021) cultivation was delayed about 11 to 13 days by more than 1st year (Oct. 2019 to May. 2020). The growth characteristics were shown that the plant height was increased in 2nd cultivation, while the number of culms and the panicle part ratio were decreased. Moreover, the nutritive value of ‘Cheongwoo’ and ‘Taeu’ were also decreased in 2nd cultivation. These changes have thought to a difference of the precipitation by cultivation years. Because, the precipitation during the period from the end of winter dormancy to the harvesting stage in 2nd (337 mm) cultivation was more about twice than 1st (169.3 mm) cultivation. However, the dry matter yield of ‘Cheongwoo’ was not shown a statistical difference by cultivation years, while ‘Taeu’ was shown to decrease tendency. The total dry matter yield regardless of the cultivation years were higher in ‘Cheongwoo’ than ’Taeu’, and especially ’Cheongwoo’ was more 3 tons per hectare (15.3 t/ha) than ‘Taeu’ (12.6 t/ha) at 2nd cultivation (p<0.01). The trend of dry weight in ‘Cheongwoo’, early mature type, showed a relatively high ratio of dry matter (p<0.05) was considered that due to a high panicle ratio by a fast heading and an adequate weight of panicles by a sufficient maturing. In conclusion, selecting the early maturity cultivars could achieve a higher and more stable total dry matter yield considering the cropping system in the central region. Furthermore, it also has the advantage of being able to double-cropping system with forage rice, which has considered the maximum whole-crop forage production year-round. These results suggest that the ‘Cheongwoo’ be optimum cultivar to produce the year-round forage on paddy fields in the central region.
In this study, five different Lentinula edodes cultivar (Chamaram, Sanbaekhyang, Sanjo 713ho, Sanjo 715ho, Sanjo 718ho) were evaluated for their ability to decolorize Remazol Brilliant Blue R (RBBR) in MEB medium, respectively. Chamaram and Sanjo 713ho decolorized RBBR rapidly in MEB medium within 3 and 5 days. The activities of manganese peroxidase (MnP) and laccase were determined on the MEB medium with and without lignin. Sanjo 713ho resulted the highest ligninolytic enzyme activities on incubation day 1, indicating of 1,213 U/mg of MnP activity and 1,421 U/mg of laccase activity.
Maca roots (Lepidium meyenii) are an important medicinal herb that have long been used by the Andes-indigenous peoples and South Americans. In Korea, recently, it has attracted attention as a health food material because of nutritional values and physiological activities. The purpose of this study was to investigate the industrial applicability of maca (red and golden varieties; R&G) as immunostimulating materials. In the macrophage stimulating assay using RAW 264.7 cells at 125~500 μg/mL of non-cytotoxicity doses, G-HW showed the most potent production of TNF-α, IL-6 and nitric oxide compared to red maca or the other extracts. The general component analysis results showed that all extracts comprised more than 90% neutral sugars with small amounts of uronic acid and protein. Meanwhile, component sugar analysis showed the difference in the content of uronic acids of cold- and hot-water extract. Additionally, the further fractionation of G-HW into crude polysaccharide (G-CP) greatly enhanced the macrophage stimulating activity, and G-CP contained macromolecules over 144 kDa, comprised mainly of glucose and galacturonic acid (51.0 and 34.9%). In conclusion, crude polysaccharide from maca showed industrial applicability as immunostimulating material, and especially golden maca showed higher macrophage stimulating activity than red maca.
