        The purpose of this study was to investigate the antibacterial effect of films on shelf-life and microbiological Safety of pork meat. Effects of antimicrobial films against total aerobic bacteria, Escherichia coli O157:H7, Listeria monocytogenes, Salmonella Typhimurium, Staphylococcus aureus in pork meat were evaluated during storage of 14 days at 5℃, 10℃ and 15℃. Antimicrobial films were developed with addition of a natural substance, wasabi extracts (Wasabia japonica). At 5℃ storage, growth of total aerobic bacteria, E. coli O157:H7, L. monocytogenes were inhibited higher than at 10 and 15℃. Especially, the numbers of S. Typhimurium and S. aureus were increased gradually at 5℃ even in the control sample, and it takes more than 14 days to increase in every sample upto 6 log10 cfu/g. The higher antimicrobial effects of the films were observed at storage of 5℃ than at 10oC and 15℃. There was a limit of a single treatment of antimicrobial film to prolong shelf-life of pork meat. The synergistic effect of antimicrobial film were observed with addition of refrigeration at 5℃.

        In this study, microbial investigation is accomplished for 554 Jeot-kal samples (102 of Jeot-kal, 448 of Seasoned Jeot-kal and 4 of Sik-khe, respectively) that corresponds with Coliform-bacteria, Escherichia coli, Aerobic live bacteria as hygienic indicator microorganisms, and Staphylococcus aureus, Vibrio parahaemolyticus as Food-borne pathogenic microorganisms. Based on the methods in Korea Food Code, reliable data are obtained as follows; in 31.9% rate of the samples, Coliform bacteria are verified in the extent of 0~20,000 CFU/g as 2.3 logCFU/g. Especially, Seasoned Jeot-kal (37.7%, 2.3 logCFU/g) are detected to 6 and 2 folds higher than those of Jeot-kal, 5.9% and 1.4 logCFU/g. Likewise, Escherichia coli is detected from 9 samples only in Seasoned Jeot-kal, that includes seasoned squid, seasoned octopus, seasoned roe of pollack, seasoned large-eyed herring and seasoned hairtail. Aerobic live bacteria are also detected in the range of 0~8.9 × 108 CFU/g. Against salinity, E. coli are detected in samples only less than 10% salinity. Concomitantly, aerobic live bacteria count is decreased to 5.5~3.6 log CFU/g upon the salinity is increased up to 25%. However, S. aureus and V. parahaemolyticus are not detected in 554 samples, presumptively referring Jeot-kal products are somehow free from such food-borne pathogens. As the results above, we deliberately consider that the sanitary control in Jeot-kal, which be necessarily fermented- as well as non-microbially inactivated should be ensured in near future and also suggest an effectual microbial standard corresponding to the Negativity in E. coli for Jeot-kal products.

        After infection by Gram negative bacteria, neonatal patients or patients in intensive care unit usually suffer from endotoxin shock, leading to death finally in spite of eradication of bacteria by potent antibiotics. The purpose of this study that is the pilot study to prevent endotoxin shock and nosocomial infection, is to offer basic data on species and concentrations of airborne microbes in hospitals. Therefore, this study collected and analyzed articles and documents on airborne microbes in hospitals in Korea that were published in relevant journals from 1980 to 2004. Studies on the concentration of airborne microbes in hospitals as a part of study on the nosocomial infection have been performed from the latter half of 1970s. Pooled average concentrations of total suspended bacteria in hospitals by RCS air sampler and Cascade air sampler were 194.85 CFU/㎥ and 367.72 CFU/㎥, respectively. They were lower than the guideline concentration(800 CFU/ ㎥) of the Korean Ministry of Environment. Pooled average concentrations of total suspended fungi in hospitals by RCS air sampler and Cascade air sampler were 20.66 CFU/㎥ and 193.34 CFU/㎥, respectively. They were lower than the guideline concentration(150 CFU/㎥) of the World Health Organization(WHO). Pooled average concentrations of total suspended bacteria in operating room and intensive care unit(ICU) were 324.75 CFU/㎥ and 182.43 CFU/㎥, respectively. They again were lower than the guideline concentration of the Korean Ministry of Environment. Staphylococcus spp., Micrococcus spp., and Lactobacillus spp. for Gram-positive bacteria, and Pseudomonas spp., Klebsiella spp., and Escherichia spp., for Gram-negative bacteria were shown in hospitals. Also, Aspergillus spp., Penicillium spp., Mucor spp., Epidemophyton spp., Trichophyton spp., and Cladosporium spp. for fungi were found in hospitals. Staphylococcus spp. was shown frequently in operating rooms, intensive care units and wards. Penicillium spp. and Aspergillus spp. were shown commonly in them.

        This work was intended for the identification of markers that are found only in the spoiled red pepper powder. When analyzed by GC/MASS, the spoiled red pepper powder contains characteristic naphthalene derivatives, 1, 2, 3, 5, 6, 7, 8, 8α-octahydro-1, 8α-dimethyl-7-(1-methylethenyl)-naphthalene and 2-isopropenyl-4α,8-dimethyl- 1, 2, 3, 4, 4α, 5, 6, 8α-octahydronaphthalene,which have not found in the normal red pepper powder. In addition, microscopic observation and microbial enumeration of the red pepper powder had been performed. Images by scanning electron microscopy showed that the surfaces of spoiled pepper powder were rough with many kinds of microbes, compared with those of normal red pepper powder. A good correlation between the bacterial and fungal counts in the same sample was observed and could be clearly classified into two groups, the normal and the spoiled group, by difference in the microbial counts. These results suggest that the spoiled red pepper powder can be identified by a combination of GC/MASS, microbial counts, and scanning electron microscopy.

        In this study, we attempt to analyze biofilter"s removal efficiency for volatile organic compounds from paint factory. this experiment conducted in a pilot plant with microorganisms immobilized polyurethane foam. 7 main components (Toulene, MEK, MIBK, o-Xylene, m-Xylene, Butyl acetate, Ethyl benzene) emitted from factory ventilation opening were analyzed. During the test period, the biofilter treated VOCs in 5 seconds (EBCT) and pressure drop was less than 30 ㎜H₂O/m in media. Removal efficiencies of all components were between 80~90% in 10 days of operation and higher than 94% after 40 days. The result of this experiment shows that biofilter can be useful technology for VOCs removal in the paint industry.

        2006년 6sim8월 국내 유통 중인 홍어회의 미생물학적 이화학적 품질을 조사한 결과 홍어회는 다른 어패류와 달리 신선 상태가 아닌 숙성 후 섭취하는 제품으로 pH가 9 내외의 수준이고, 암모니움을 함유하고 있으며, 다른 신선식품 보다 VBN 값이 15sim30배 정도 높았다. 숙성 홍어회의 미생물 오염 지표인 총균수 수준이 대다수 제품에서 식품 공전 상 잠정규격인 5 log CFU/g보다 높게 검출되었으며, 대장균군이 검출된 사례도 18건 중 1건이 있었고, 병원성 미생물인 S. aureus가 검출된 사례도 18건 중 2건이 있었다. 또한 약 5 log CFU/g 수준의 S. aureus를 숙성된 홍어회의 가식부위에 접종했을 때 저장 10일 째 일정 수준 (2 log CFU/g) 감소하긴 했지만, 3 log CFU/g 수준의 S. aureus가 10일 이상의 저장 기간에 걸쳐 유지되는 것을 확인할 수 있었다.

        Volatile organic compounds and malodors emitted from painting operations are of primary concern in the automotive industry and pressured to be abated by newly amended VOC rule and offensive odor law in Korea. Over-sprayed paints in painting booths are delivered into water surface by downward stream of clean air and collected in water circulating pools. The circulating water mixed with waste paints generated from paint booths put out floating sludge by addition of chemical killing agent and floating agent and the odors evolved from this procedure has been under the circumstance that it must be validated to match the new rules. The activated sludge method that the circulating water pond would be considered as a huge bioreactor was applied to this over-sprayed sludge tank. and we got some remarkable reductions of sludge, odours, VOCs and dirts on air dusts. Herein, some abbreviated results will be reported.

        In this study, we attempted to analyze removal efficiency of odorous compounds emitted from Grit chamber and night soil treatment facility using biofilter with microbial catalyst. Air dilution method was used for mixed odor gases analysis. UV-vis spectrophotometer for ammonia and Hydrogen sulfide, Methyl mercaptan, Dimethyl sulfide, Dimethyl disulfide were measured using GC/PFPD. Sample gases were collected at the inlet and outlet of biofilter. The analysis result showed that average concentration of major odorous compounds were ammonia with 5,100 ppb and hydrogen sulfide with 797 ppb from grit chamber and ammonia with 1,407 ppb and hydrogen sulfide with 2,475 ppb from night soil treatment facility. Hydrogen sulfide was the most influential compound of malodor based on odor quotient index. The average dilution threshold of odor was 923 at grit-chamber and 1,267 at night soil treatment facility. The removal efficiency of odorous compounds from sewage treatment facility were more than 94% using polyurethane foam biofilter within empty bed contact time 3sec. The emitted concentration to the atmosphere was satisfied with the criterion of the offensive odor control law.

        In this study, the physicochemical and microbiological properties of market-available skate (Raja kenojei) kimchi were evaluated in comparison to long-term fermented Baechu kimchi. The comparative results for the skate (Raja kenojei) and Baechu kimchi products are as follows: salt concentrations = 3.40% and 3.95%, respectively; pH and acidity values = 4.01 and 3.90, and 0.65% and 0.82%, respectively; redox potential Eh values = 119.82 mV and 123.08 mV respectively; reducing sugars levels = 15.51 mg% and 13.23mg%, respectively; ascorbic acid levels = 24.21mg% and 22.18mg%, respectively; color L-values = 46.86 and 44.54, a-values = 15.46 and 12.28, and b-values = 29.94 and 28.36, respectively; hardness properties = 11.36 kgf and 10.23 kgf, respectively; hot water soluble pectin (HWSP) contents and sodium hexametaphosphate soluble pectin (NaSP) contents = 15.23% and 17.35%, and 32.51% and 29.64%, respectively; hydrochloric acid soluble pectin (HClSP) contents = 55.1% and 53.2%, respectively; total viable cell counts = 4.78×108 and 1.35×108, respectively; lactic acid bacteria counts = 5.18×105 and 1.32×105, respectively; and yeast levels = 8.52×105 and 5.23×105, respectively.
