        The risk ranking of food groups included the Korea Food Code is a potentially powerful means to prioritize food safety management strategies. Although the interest in risk ranking of food groups has been increasing worldwide, there was, until recently, no standard system in Korea for the risk ranking of food groups. This study was conducted to rank food groups using theoretically estimated comparative risk scores of 101 food groups included the Korea Food Code. These scores were estimated using the risk evaluation model, which focuses on 3 aspects, namely, exposure assessment, severity assessment, and consumption part. The results of this study revealed that the risk was the highest in the case of ready-to-eat (RTE) food items, followed by fish products and breads. Using this ranking system, we can identify the food with high risk scores and design risk management strategies targeted specifically at these items.

        This study was conducted to develop the unique native local foods of Namwon and to provide basic data needed to reinvigoratethe tourist industry and local economy. Perception and satisfaction with native local foods of Namwon were surveyed in 483 tourists (246 men and 237 women 53% visiting Namwon for the first time). Of the participants, 41.2% did not stay or eat in Namwon. Most tourists visited with other family members and spent approximately 20,000 won per capita on food. Of the foods sampled for the first time, preferred foods were (in order of preference and intention to order again) Chueo-tang, Hanjeongsik, wild edible greens-jeongsik, and black pork. The degree of food satisfaction was relatively favorable (3.54±0.08 points on a 5-point satisfaction scale), with taste being the most important factor affecting the degree of satisfaction for 92.9% of the subjects. However, willingness to revisit Namwon on the basis of the local foods was not as high as the degree of satisfaction with the foods. Insufficient information and publicity concerning Namwon local foods were cited as impediments, and suggested improvements included taste, sanitation and food-based tourism. The degree of satisfaction was higher in men than in women. Age, residence, and occupation were not related to the degree of satisfaction. But, the willingness to revisit Namwon to sample local foods was related with gender (men more willing) and occupation (public service personnel, business owners, salaried employees, professionals, and housewives more willing, in order). Women in general and housewives in particular were most critical in food assessment.

        The principal objective of the present study was to survey the demands of an education program for evaluations of the efficacy of health functional foods. A questionnaire was developed and sent to 2,225 members of the Biofood Network Center. A total of 101 (4.6%) individuals responded, 54.5% of the respondents were male and 45.5% were female; the respondents' occupations (in order of prevalence) were as follows: company worker (48.5%)〉researcher (27.7%)〉student (13.9%)〉professor (5.0%)〉pharmacist (2%), and dietitian (2%). The businesses in which the respondents worked were (again in order of prevalence) as follows: research & development (64.4%)〉marketing (11.9%)〉consultation and education (5.9%)〉manufacturing and others (17.9%). 41.6% of the respondents reported experience in businesses relevant to KFDA approval for functional ingredients and health functional foods. The results showed that 63.4% of the respondents had previously been educated about functional foods; the types of education program reported were (in order of prevalence): 'overview and acts of health functional food' (n=49)〉'standards and specification for health functional food' (n=41)〉'efficacy evaluation-human study' (n=24)〉'safety evaluation' (n=21)〉'efficacy evaluation-in vivo study' (n=13)〉and 'others' (n=10). Respondents preferred off-line education programs (62.4%) to on-line programs (22.8%). The preferred duration of an educational program was '2~3 days: total 14~24 hours' (30.7%); thus, short-term programs were favored. The primary requirements of a program, from the perspective of the learner, were as follows (scored on a 7-point scale); 'efficacy evaluation and case study-human study' (5.80 points)〉'standards and specification for health functional food' (5.72 points)〉safety evaluation' (5.7 points)〉'overview and acts of health functional food' (5.67 points) and 'efficacy evaluation methods of health functional food by efficacy (intensive)' (5.67 points). Preference for functionality was as follows; 'body weight & body fat' (21.8%), 'immune function' (18.8%) 〉 'blood glucose' (10.9%). In summary, the educational demand for 'efficacy evaluation and case study' was highest among the curriculum options provided, and with regard to functionality, 'body weight & body fat', 'immune function' and 'skin care' were considered most important by respondents. These results differed among respondents with different jobs and duties, and this suggests that customized education programs for health functional food should be developed.

        This study was conducted to examine the superior factors and the perception of Korean traditional foods by college students studying in food related industries. The subject group consisted of 65.0% of the students majoring in food service & culinary arts, 12.9% of the students majoring in food & nutrition, and 7.3% of the students majoring in baking & pastry. The nutritional value was evaluated as the top superior factor of Korean traditional foods by the study subjects. In addition, 92.4% of reported that they had eaten Korean traditional foods in the past, 76.8% of whom responded that the reason for having Korean traditional foods was its time-honored tradition. 'Cooking for oneself' was considered to be the most popular way (78.2%) of obtaining Korean traditional foods, while the traditional market (58.6%) was the most popular place to purchase the foods. 'Not having enough time' (47.2%) was the primary reason for not having Korean traditional foods, although 72.9% of the subjects reported that they wanted to learn about Korean foods. 'Standardization of taste, nutritional value, and recipes' was found to be the most important factor (41.3%) required to increase the consumption of Korean traditional foods. Additionally, 56.1% of the subjects responded that they feel there is a need for modernization of the cuisine to meet the taste of the general public. However, 61.4% of the subjects responded that the succession of traditional dietary culture was the primary reason for developing traditional cuisine, which indicates that there is a bright future for Korean traditional foods.

        The purpose of this study is to present the scheme that can enhance the value of native local foods by analyzing the case into which storytelling is incorporated in order to revitalize native local foods. Towards this end, the cases of native local foods throughout the country were recommended through professional survey and one region among them was finally selected through the field study. The survey on the native local foods was conducted through qualitative study. The four stages of storytelling: the findings of storytelling, the production of storytelling, the experience of storytelling, and sharing of storytelling were analyzed by stage and the contents of the survey by stage were developed. In the findings of story, the origins and background of the main family's foods and food-related stories were derived. The production of stories deals with how to convey the stories of surveyed native local foods to consumers and it presented the stories about the place and food menu. In the experience of storytelling, the physical environment and non-physical environment, in which people visit native local eating houses and experience native local foods were analyzed. Finally, in the sharing of story, how the tourists who have experienced the native local foods make stories and disseminate and share them was analyzed. The significance of this study is that through the storytelling technique it presented the findings, production, experience and sharing of native local foods in the level that can apply to practical business. Although the research is in the stage of inquiry, this study is meaningful in that it presented the basic methodology that can induce the revitalization of the native local food industry through examining the tradition and significance of native local foods that can be found in all the regions of the country.

        The purpose of this study was to investigate Chinese customers' perceptions of Korean foods and their satisfaction toward Korean cuisine restaurants. The subjects of this study were 202 Chinese individuals who visited Korean cuisine restaurants in Shanghai, China. The subjects viewed Korean foods as favorite foods and perceived them as fresh and seasonal, and mostly composed of cereals and vegetables however they did not view Korean cuisine as good for health. As compared to customers visiting a Korean restaurant for the first time, those who had visited Korean restaurants previously agreed more strongly with the following items: 'Korean food has a beautiful color', 'Korean food is familiar', 'Korean food smells good', 'Korean food is healthy', 'Korean food is nutritious', and 'Korean food is salty and spicy'. In addition, as compared to occasional visitors, frequent visitors of Korean cuisine restaurants more strongly agreed with the followings: 'Korean food has a beautiful color', 'Korean food is expensive', 'Korean food is healthy', 'Korean food is nutritious', 'Korean food is salty and spicy', and 'Korean food includes many fermented foods'. The subjects considered 'appearance of menu', 'variety of menu', 'nutrition of menu', and 'Chinese characters for menu and ingredients' as the most important attributes when choosing Korean cuisine restaurants. The frequent customers of Korean cuisine restaurants considered 'kind service', 'employee knowledge of Korean foods', 'operation hours of restaurant', and 'cleanliness of restaurant' as the most important restaurant attributes. In addition, the frequent customers of Korean cuisine restaurants were more satisfied than the occasional customers with the followings: 'nutritional quality of menu', 'quick service', 'cleanliness of restaurant', 'appearance and signboard of restaurant', and 'image of restaurant'. The implications of the data are discussed.

        본 연구는 식중독을 일으킬 수 있는 황색포도상구균(Staphylococcus aureus)의 검출을 이용하여 일식당의 식자재, 조리공정, 조리 기구, 조리 종사자의 오염수준을 예측하고 오염에 영향을 미치는 인자를 확인하고자 하였다. 시료는 서울시에 위치한 일식당에서 초밥과 생선회를 수거하였다. 몬테카를로 시뮬레이션을 통해 초기 오염수준으로부터 각 공정별 위해 인자를 고려하여 최종오염수준을 예측한 결과, 새우 및 문어초밥의 경우, 모든 초밥이 저장기간 동안 S. aureus가 증식되는 것으로 나타났으며 특히, 문어초밥이 가장 높은 오염도를 보였다. 이는 생선회가 온도변화에 따른 균의 증식이 활발하고, 일식당에서 초밥을 섭취하기 직전에 초밥 중 생선회의 급속한 온도 변화가 나타나기 때문으로 판단된다. 초밥의 민감도 분석 결과, 완성된 초밥의 섭취 시 온도의 민감도 값이 0.419로 최종오염수준을 증가시키는 것으로 예측되었다. 두 종류의 초밥에서 동일하게 보관 시간과 섭취 시의 온도가 최종 오염수준에 가장 크게 영향을 주는 것으로 나타났다. 이는 일정 시간이 지난 후 초밥을 섭취하는 것이 균의 농도 증가에 가장 크게 영향을 미친다는 것으로 초밥을 조리 후 즉시 섭취하는 것이 균의 증식을 크게 예방할 수 있음을 알 수 있다. 연어, 도미, 방어회의 경우 섭취 시간에서 민감도 값이 0.71로 가장 큰 민감도를 나타내었고, 섭취 시 온도 또한 민감도가 크게 나타났다. 초밥의 시나리오 분석 결과, 실온 보관 시, 섭취시간이 2시간 이내일 때 식중독을 유발하지 않는 안전한 수준임을 알 수 있었다.

        The purpose of this research was to investigate consumers' perceptions of foods that are most compatible with traditional Korean liquors. The study participants were a total of 402 customers who visited traditional Korean bars. Thirty-eight percent of the participants drank alcohol once or twice a week, and overall, 79% drank with friends or co-workers. Forty-three percent spent 30,000-40,000 won on alcoholic drinks, and half of them frequently drank distilled Soju whereas 27% drank beer. Those who drank traditional Korean liquor chose to do so because they viewed it as good for their health and the beverage was tasty. Participants selected Yakju/Baekseju (47.5%), Bokbunjaju (21.1%), and Takju/Makgeoli (8.2%) as the most compatible Korean traditional liquors with Korean traditional foods. The most compatible foods with Yakju were identified as Haemulpajeon (11.8%), Dubukimchi (9.8%), and Bossam/Suyuk/Pyeonyuk (7.5%). Bokbunjaju was viewed as a good match with Jangeogui (8.1%), Hunjeori (6.5%), and Saengseonhoe (6.4%). The respondents perceived Deodeokgui (6.7%), Saengseonhoe (5.9%), and Dubukimchi (5.6%) as the most compatible foods with Yakju with mushrooms. Chengju was viewed as a good pairing with Eomuktang (9.2%), Altang/Maeuntang (7.2%), and Saengseonhoe (6.8%). The respondents thought Takju went well with Haemulpajeon (17.7%), Dubukimchi (14.2%), and Kimchijeon (11.7%). And finally, Altang/Maeuntang (11.8%), Samgyeopsalgui (8.7%), and Honghaptang/Jogaetang (8.1%) were mentioned as the most compatible foods with distilled Soju.

        In this study, Jeonju bibimbap, Bulgogi, Japchae, Whangpomuk, Kimchijeyukbokkeum, and Sangseonjeon were selected as examples of take-out style Korean foods, and sensory evaluations on a 9-point hedonic scale were conducted with dining staff at UCLA. 54.5% of the respondents in this study were male and 62.7% were Hispanic/Latino, with the respondents fairly evenly split across age groups in a range of 25-54 years. In the sensory evaluation, the most acceptable items were judged as follows: Bulgogi (8.1)>Japchae (7.5)>Sangseonjeon (7.4)>Jeonjubibimbap=kimchijeyukbokkeum (7.3)>Whangpomuk (6.9). Among the 6 Korean foods (Jeonjubibimbap, Bulgogi, Japchae, Whangpomuk, Kimchijeyukbokkeum and Sangseonjeon), Bulgogi, and Saengseonjeon were the most acceptable items for the female and male respondents, respectively. All of the items were popular with the majority of the responding age groups, with the exception of the 18-24-year groups; in particular, Kimchijeyukbokkeum and Bulgogi scored relatively high on acceptability (7.0) for all respondents. Jeonjubibimbap, Japchae, Whangpomuk, and Saengseonjeon were also found to be acceptable to all respondents except for the African American respondents. We suggest that the Korean foods listed above are applicable items for quick service restaurants in the U.S. market.

        본 연구는 주요 냉장식품(두부, 묵, 어육가공품(어묵), 생면, 김초밥, 샐러드)의 온도 관리실태를 조사하여 문제점을 파악하고 국내 유통업소의 냉장·냉동진열 판매 제품의 관리온도 개선 및 관리방안을 제시하고자 하였다. 주요 냉장고 내 위치별 온도는 보편적으로 아래(7.5 ℃)가 높고 윗부분(6.4 ℃)이 낮았으며, 앞쪽(8.9 ℃)이 높고 뒤쪽(7.5 ℃)이 낮은 것으로 조사되었다. 모든 냉장식품의 평균 냉장고 보관 온도는 7 ℃(최대 22.9 ℃, 최저 -2 ℃)였으며, 대형할인매장이 6.5 ℃, 백화점이 7.5 ℃, 편의점이 7.6 ℃ 였다. 모든 냉장식품의 평균 표면온도는 8.2 ℃(최대 19 ℃, 최저 -0.4 ℃)였으며, 대형할인매장이 8.1 ℃, 백화점이 8.5 ℃, 편의점이 7.6 ℃으로 조사되었다. 식품표면과 중심온도는 식품별 차이가 있으며 최대 2.3 ℃ 차이로 나타났다. 두부(표면온도 6.1~10.6 ℃, 중심온도 4~11.1 ℃), 어묵(6~12.3 ℃, 6.5~13.6 ℃), 김밥(2.3~18.2 ℃, 2~17.3 ℃), 샐러드류(4.6~12.2 ℃, 4.1~10.4 ℃), 생면류(3.4~12.6 ℃, 3.8~10.3 ℃), 묵류(7.1~19 ℃, 8.3~17.1 ℃)의 다섯 가지 식품별로 차이를 보였다. 냉장고 표시온도와 식품표면 온도 항목간의 유의적 차이가 있는 것으로 나타났다(P<0.01). 냉장고 표시 온도는 김밥 1곳(100%)에서 규정 온도인 10 ℃를 초과했지만, 식품표면 온도에서는 두부 9곳(17%), 어묵 6곳(11.3%), 묵 10곳(18.9%), 생면 11곳(20.8%), 김밥 13곳(24.5%), 샐러드 4곳(7.5%)이 초과한 것으로 나타났다. 결론적으로 우리나라 냉장보관 식품 중 표면온도와 10 ℃를 초과하는 경우가 많아 냉장보관식품의 온도관리가 철저히 이루어져야 할 것으로 판단된다.

        본 연구에서는 대표적인 즉석섭취식품 5종(김밥, 초밥, 회, 샐러드, 샌드위치)에 대한 미생물 모니터링 검사를 실시하여, 이들 제품에 대한 위생 안전성 확보를 위한 기초자료를 제공하기 위해 진행되었다. 이를 위해 전국의 대형 백화점, 할인점, 슈퍼 등지에서 판매되는 즉석섭취식품 5종, 총 440품목을 수거하여 위생지표세균 검사 및 식중독균 검사를 실시하였다. 제품별로는 초밥이 20.4%로 가장 높은 미생물 검출율을 보였으며, 그 다음으로 13.3%의 김밥, 12.5%의 회, 6.9%의 샐러드, 2.8%의 샌드위치의 순서로 나타났다. 검출된 미생물을 살펴 보면 황색포도상구균이 6.6%로 가장 많이 검출되었으며, 다음은 2.7%의 대장균군, 2.3%의 리스테리아균, 0.7%의 바실러스 세레우스균, 0.5%의 대장균 순서로 검출되었으며, 장염비브리오균과 살모넬라균은 검출되지 않았다. 검출된 황색포도상구균의 정량분석 결과는 전체적으로 200~5,500 cfu/g 의 분포를 보였으며, 평균적으로는 600 cfu/g을 나타내었다.

        This study investigated elementary school students' perception, preferences, and intake of Korean traditional foods, focusing specifically on kimchi, tteok (rice cake), and eumcheong (beverage) varieties; and compared them by gender, living with grandparents, mother's occupation, and meal preparation by the grandmother. The subjects were 287 6th grade elementary school students in Busan. The results were as follows: 80% of children were interested in Korean traditional foods. 40% believed that their intake of Korean traditional foods was decreasing because these foods were not palatable to them. The majority of them, however, said they would continue to eat Korean traditional foods as they had done (54.7%) or eat more than before (36.6%) in the future. The children thought that Korean traditional foods were rich in nutrition and good for their health. The children had the highest preference for Baechu-kimchi among varieties of kimchi, and they had high preferences for Songpyeon, Galaitteok, and Injulmi. They had high preferences for Sikhye, citron tea, and adlai tea. Over 80% reported consuming Baechu-kimchi and Kkakdugi three to four times per week. They had eaten Injulmi the most frequently among the tteoks, while over 80% had eaten the other types of tteok only once or twice per month. Adlai tea, citron tea, and Sikhye were drunk more than once per week. In general, we noted no significant differences in the children's perceptions, preferences, and intake of Korean traditional foods by gender, living with grandparents, mother's occupation, and meal preparation by grandmother, with the exception of several items. The students had a very positive perception of Korean traditional foods. They had higher preferences for and had more frequently consumed the more familiar Korean traditional foods. It is therefore suggested that if the children had opportunities to experience Korean traditional foods more frequently and variously at home or in restaurants, they would appreciate Korean traditional foods even more, and develop higher preferences for these foods.

        A survey on consumer’s awareness and perception toward genetically-modified (GM) foods was conducted on 2110 random samples of Korean consumers. More than 65% of the respondents were exposed to some information related to GM foods. The respondents answered that the greatest benefit of the development of GM foods is remedy of potential food shortages in the future. More than 90% of Korean consumers wanted GM foods to be labeled as such. More than 50% of the respondents would not buy until they know more about GM foods. Only 35.8% of Korean consumers were found to know that food items originating from plants contained genes. More consumers responded that they would not buy herbicide-resistant GM soybean but buy vitamin-enriched GM soybean. Many Korean consumers' decision of acceptance or rejection of GM foods depend not on the basis of biotechnology, but on the basis of the degree of benefit to the consumers. Only 6.4% of Korean consumers responded that GM foods were the greatest threat to the safety of Korean foods. The perception of Korean consumers on GM foods has not changed significantly during the past 5 years.

        The purpose of this study was to measure the effects of trust, knowledge, optimism, risk and benefits on consumer attitudes toward genetically modified foods. A total of 326 questionnaires were completed. Moderated regression analysis was used to measure the relationships among the variables. The analysis results for the data indicated a good model fit in Model 2 rather than Model 1, in which the direct effects of trust, optimism and benefits had statistically significant direct effects on the respondents' attitudes toward genetically modified foods, while the direct effects of knowledge and risk were not statistically significant. As expected, the interaction term of risk and benefit had a significant effect on consumer attitude. Moreover, the effect of risk on consumer's attitude toward genetically modified foods was statistically significant at all levels of benefit, except at the lower benefit level. Finally, the results of this study indicated that genetically modified food developers and marketers should attach importance to the interaction effect of benefits to understand the elements of market demand and customer loyalty.

        In this study, 3,301 domestic and foreign patents, established from 1980 to June, 2007, were reviewed in order to examine the technological trends in treating or preventing liver disease. Primary focus was placed on countries such as Korea, Japan, and the United States - the leading nations with regard to liver function research. This paper explores the systematic search that utilized a research-focused database and research analysts. Since the year 2000, Korea has demonstrated increased developments in the area of diet and liver disease, as shown by an increase in relevant patent caseloads and submissions especially for medicinal preparations containing compounds or reaction products with undetermined constitutions. In addition, there was up to a 29% increase in themarket share and the frequency of patent submissionshad increased. Japan has shown a similar trend to Korea with an increase in research, but has focused more on medical preparations containing active organic ingredients. In the United States, an increase in the number of patents was shown after the year 2000.

        유해물질의 식품기준은 위해성이 인정될 때 정하는 것을 원칙으로 한다. 위해평가의 절차에 거쳐 정량적 수치로 인정되는 위해성은 정부의 관리방향을 설정하는데 중요한 정보를 제공한다. 대표성 있는 모니터링자료가 확보되어야 정확한 위해평가를 수행할 수 있으므로 만성적 건강영향을 나타내는 유해물질의 경우 장기적 모니터링결과를 확보하는 것이 필요하다. 과거에는 대다수 인구집단의 안전에 초점을 두었으나, 최근에는 고섭취에 의한 유해물질 고노출그룹, 동일노출 수준에서도 유해영향을 크게 나타내는 민감그룹, 노약자, 임산부 등의 안전까지도 검토 후 소수그룹까지 안전할 수 있는 기준을 설정하는 추세이다. 유해물질 기준검토를 위하여 최신의 독성정보, 통계정보, 분석기술정보, 낮출 수 있는 한 낮출 수 있는 ALARA(as low as reasonably achievable)정보들이 필요하다.

        어린이 먹거리 안전관리 사업의 일환으로 어린이 식품 품질인증제도 연구를 수행하였다. 이 중 어린이 눈높이에 맞는 친숙한 브랜드 이미지 구축을 통하여 식품자체의 안전성을 확보함과 동시에 어린이에게 올바른 식품선택기준과 기회를 제공하기 위한 품질 인증마크를 개발하였다. 눈높이는 8~13세의 초등학생으로 하였고, “안전한 식품, 바른 영양, 건강한 어린이”라는 식약청 vision에 따라 로고 컨셉은 안심·미소, 인증·검증·보호, 건강으로 하였다. 명칭은 식약청내 공모를 통해 제안된「어린이용우수식품」, 「어린이안심식품」,「어린이우수식품」등 세 가지 안으로 하였으며, 명칭에 따라 총 36가지의 품질인증 로고시안을 제안하였다. 설문지는 이 중「어린이우수식품」으로 디자인된 12가지 시안으로 구성하였고, 초등학교 학부모(331명) 및 어린이(321명)를 대상으로 설문 조사를 실시하였다. 학부모와 어린이의 선호도를 종합한 결과 시안 8이 16.1%로 가장 높고, 시안 6(15.5%), 시안 3(14.0%) 순임을 알 수 있었다. 이러한 연구결과를 토대로 어린이 먹거리 안전성 확보 사업의 기반을 구축하여 어린이 기호식품에 대한 부모와 어린이의 선택권을 강화할 수 있으며, 바르고 안전한 식품을 선별하기 위한 검증으로 어린이 건강을 보호할 수 있을 것으로 사료된다.
