        The purpose of this study was to develop a functional beverage by using Caragana sinica extract and Tremella fuciformis Berk, which have high physiological effects such as anti-diabetic, antioxidant, anticancer, anti-lipidemic and anti-inflammatory. To this end, we used various mixing ratios of Caragana sinica extract, Tremella fuciformis Berk, and isomalto oligosaccharide, and measured the physicochemical properties of those beverages. The analyses showed the following: moisture content of those beverages using Caragana sinica extract and Tremella fuciformis Berk was 50.51~67.64%, pH was 5.19~5.38, and crude fat content was 0.28~0.52%, crude protein content was 1.26~1.80%, ash content was 0.47~0.80 and sugar content was 8.55~26.98°Brix. The lightness (L) of the beverages was 37.70~58.11, the redness (a) was 6.88~16.94, the yellowness (b) was 13.72~23.68, the total polyphenol content was 2.07~3.46 mg/g, and the total flavonoid content was 0.37~0.42 mg/g. Based on the results, it was confirmed that the nutritional components and total polyphenols of functional beverage using Caragana Sinica Extract, Tremella Fuciformis Berk and isomalto oligosaccharide were high at a mixing ratio of 1:1.3:25%. These results will increase the use of Caragana Sinica Extract and Tremella Fuciformis Berk, as functional materials in the future, and provide a framework for the manufacturing of diluted beverages comprising mineral water and carbonated water.

        Nitrophenol sensors have garnered interest in pharmaceuticals, agriculture, environment safety and explosives. Various methods have been proposed to detect 4-nitrophenol, but nitrophenol isomers such as 2,4-dinitrophenol (DNP) and 2,4,6-trinitrophenol have been comparatively less studied. For the first time, the present work explores graphitic nanocarbon, i.e., carbon black (CB) interface for sensing of DNP. Two reduction potentials were noted at − 0.48 and − 0.64 V for o-NO2 and p-NO2 moieties, respectively, at CB/GCE. At the same time, bare GCE (glassy carbon electrode) shows a single reduction potential at − 0.7 V. The electrocatalytic effect and adsorption ability of the interface was studied from the DNP concentration effect. Scan rate and pH studies suggest that the CB acquires four electrons for NO2 reduction by the diffusion phenomenon. A broad detection range of 10–250 μM DNP with a very low detection limit of 0.13 (o-form) and 0.15 μM (p-form) was achieved using the CB interface. The real-time applicability of the fabricated sensor was evaluated using commercially available beverages with excellent recovery values. The stability, repeatability and reproducibility of the CB interface were successfully confirmed. Comparison of the sensing parameters of the developed sensor with those reported in literature reveals excellent detection limit and response time for the CB-interfaced DNP sensor, indicating its potential for environmental and commercial applications.

        This study was to investigate the sorbic acid, benzoic acid and sulfur dioxide in commonly consumed beverages, snacks and instant ramens in Korea. A total of 150 food samples including 50 beverages, 50 snacks and 50 instant ramens were examined using the Korea Food Code method. Sorbic and benzoic acid were analyzed by the HPLC method, whereas sulfur dioxide was measured by Monnier-Williams method. Our results indicated that benzoic acid was detected in six beverages samples, and its concentration was in the range of 3.08-11.94 mg/kg. The contents of both sorbic and benzoic acid in 50 beverage samples did not exceed the residue allowance standards set by the Ministry of Food and Drug Safety (MFDS). Sulfur dioxide was detected in 12 beverages samples, but its content was lower than the detection limit specified in the method by the Korea Food Code. On the other hand, sorbic acid was not detected all samples. These results provide a basic data regarding sorbic acid, benzoic acid and sulfur dioxide in commonly consumed beverages, snacks and instant ramens in Korea.

        본 연구에서는 식품섭취량 데이터를 활용하여, 한국인의 식습관을 분석하고 관리방향을 제안하였다. 국민건강영양 조사의 원시자료를 활용하고, 국내 대표적 식품 분류체계인 식품공전을 반영해서 품목수 839개(세부품목수 1,419개)를 대상으로 실시하였다. 일일 총 식품섭취량은 1,585.77 g/day 이고, 그 중 원재료식품은 858.96 g/day(54.2%), 가공식품은 726.81 g/day(45.8%)로 산출되었다. 식품군별 식품섭취량은, 곡류가 가장 높은 비율을 차지했고, 식품섭취량 상위15위 식품군 중 90% 이상의 대상자가 섭취하는 목록으로는 곡 류(99.06%), 근채류(95.80%)로 나타났다. 품목별 분석에 의하면 주요 다소비(일일식품섭취량 1%이상 섭취, 158.6 g/ day) 및 다빈도(일일평균 국민 25% 이상 섭취, 5,168명) 품목은 쌀, 배추김치, 사과, 무, 달걀, 고추, 양파, 밀, 두부, 감자, 오이, 돼지고기로 산출되었다. 섭취빈도 중심의 상위순위 목록은 주로 한식양념 재료들이 포함되었다. 김치류는 배추김치(64.89 g/day)의 섭취량 비율이 67%로 가장 높게 나타났다. 주류의 경우 섭취량 및 섭취빈도 모두 상위 5위 안에 포함되어 있으며, 세부적인 섭취량은 맥주 (63.53 g/day), 소주(39.11 g/day), 막걸리(19.70 g/day) 순으로 높았고, 섭취빈도는 소주(11.3%), 맥주(7.2%), 청주(6.6%) 순으로 높게 산출되었다. 2010년부터 2015년도 식품섭취 량 추이에서 곡류는 꾸준하게 감소하고, 음료류는 다소 증가하는 추세였다. 주류의 섭취빈도에서는 일부 종류인 막걸리, 와인, 청주, 복분자주에서 년도별로 감소하는 경향 이었고, 김치류도 감소하는 추세였다. 식품 섭취패턴은 체내노출과 직접적인 영향이 있으며, 식품섭취량이 높은 식품과 섭취빈도가 높은 식품 모두 관리가 중요하지만, 우 리나라 섭취 특성을 고려하여 국내에 적합한 안전관리 방안 마련이 필요하다. 식품 섭취로 인한 유해오염물질의 노출량 관리를 위해서 다소비 식품은 섭취용량과 관련이 높으므로 식품의 오염도 관리 중심으로 다빈도 식품은 섭취 기간과 관련이 높으므로 섭취시 장기노출로 인한 체내축적 중심으로 접근하는 것을 권장한다.

        본 연구는 기능성 음료에 대한 인식 및 구매실태를 조사함으로써 기능성 음료의 구매와 섭취 시 기능성 음료에 대한 지침서 및 영양교육 자료의 기초자료를 제공하고자 한다. 기능성 음료의 구입 실태, 구입 경험, 인식, 섭취빈도 및 태도 등을 조사하였다. 1. 조사대상자 중 남자는 183명(51.7%), 여자는 171명(48.3%)이었고, 연령은 20대가 146명(41.2%), 30대가 81명(22.9%), 40대가 69명(19.5%), 50대 이상이 58명(16.4%)이었다. 그중 기혼자는 182명(51.4%), 미혼자는 172명(48.6%)이었다. 2. 최근 한 달 동안 기능성 음료 구입 여부는 조사대상자의 82.8%(293명)가 기능성 음료를 구입하였다. 3. 기능성 음료를 구입하는 이유는 남자는 ‘피로회복’이 43.1%, ‘갈증해소’가 21.6%, ‘건강증진’이 19.6%, ‘영양보충’이 15%, ‘다이어트’가 7% 순으로 나타났으며, 여자는 ‘피로회복’이 28.6%, ‘건강증진’이 26.4%, ‘갈증해소’가 22.1%, ‘영양보충’이 12.9%, ‘다이어트’가 10% 순으로 조사되어 유의한 차이를 보였다(p<0.005). 새로운 기능성 음료의 대한 정보습득 경로는 미혼은 매장방문(47.9%)을 통해서 기혼은 주변사람(43.0%)을 통해 얻는다고 응답하여 유의한 차이를 보였다(p<0.001). 기능성 음료의 구입 장소는 미혼은 편의점(46.5%)에서, 기혼은 대형마트(29.5%)에서 가장 많이 구입하는 것으로 나타나 유의한 차이를 보였다(p<0.001). 기능성 음료 구입 시 영향을 주는 요인은 ‘제조일자(M=4.25)’, ‘원재료 함량(M=4.17)’, ‘영양표시(M=4.15)’, ‘원산지(M=4.13)’, ‘가격(M=4.13)’, ‘맛’(M=3.96), ‘상표’(M=3.62), ‘향’(M=3.55), ‘색(M=3.24)’ 순으로 나타났으며, 여자가 남자보다 모든 항목에 대해 영향을 받는 것으로 나타났다. 월평균 기능성 음료 구입 비용은 20대는 ‘1만 원 이하’가 50.9%, 30대는 ‘2~5만 원’이 42.6%, 40대는 ‘2~5만 원’이 42.4%, ‘50대 이상은 ‘11만 원 이상’이 40.4%로 나타나 유의한 차이를 보였다(p<0.001). 4. 기능성 음료 섭취빈도를 분석한 결과, 에너지음료는 여자보다 남자가 많이 섭취하는 것으로 나타났다(p<0.001). 홍삼 음료는 50대 이상의 연령층에서 주 1~2회 섭취가 44.2%로 높았으며(p<0.001), 미혼보다 기혼이 홍삼 음료를 많이 섭취하는 것으로 나타났다(p<0.001). 여자보다 남자가 비타민 음료를 많이 섭취하였고(p<0.005), 건강원 음료는 50대 이상의 연령층에서 주 3~4회 섭취가 28.8%로 가장 높았으며, 기혼이 미혼보다 섭취빈도가 높았다(p<0.001). 기능성 음료를 섭취하는 시기는 ‘평상시’가 42.3%로 가장 많았고, ‘일할때’ 27.0%, ‘식사 전후’ 16.7%, ‘운동 전후’ 14.0% 순으로 조사 되었다. 기능성 음료 섭취 후 남자는 피로회복의 효과를 인지하였으며, 여자는 다이어트 미용이나 공복감 해소, 변비 개선에 효과를 인지하였다. 연구결과를 고려할 때, 소비자의 올바른 기능성 음료의 구매와 섭취를 위하여 소비자가 스스로 선택할 수 있도록 기능성에 대한 명확한 정보전달이 필요할 것으로 사료된다. 또한, 기능성 음료의 내용 영양소함량에 따른 상한섭취량과 과잉 및 부적절한 섭취로 건강상의 문제에 대한 영양교육이 필요할 것으로 생각된다. 조사대상자의 기능성 음료에 대한 정보 습득경로로는 기사검색과 웹서핑 및 스마트폰 이용이 주가 되고 있다. 따라서, 앞으로의 영양교육은 인쇄물 교육보다는 앱이나 인터넷(배너) 광고 등을 통한 교육의 활성화가 바람직하다고 판단된다.

        The physiologically advantageous aspects of green tea have been identified recently and green tea has been a favorite drink of many people. Due to the increased awareness of green tea’s positive effects on human health, the demand for foods containing green tea has increased. This has led to the development of diverse green tea-related beverages; thereby many companies in Korea have put a wide variety of manufactured green tea beverages on the market. However, the components within green tea beverages have not been examined in Korea yet. In this study, we investigated the contents of the physiologically functional materials found in green tea, such as catechin, catechin gallate, epicatechin, epicatechin gallate, epigallocatecin gallate, gallocatechin gallate and caffeine. Fifty-six green tea products purchased from the local grocery stores and cafes were analyzed using high performance liquid chromatography (HPLC) analysis. As a result, all tested products contained catechin and caffeine, although the amount of each component was largely different. The total amount of catechin derivatives in the manufactured green tea beverages purchased from cafes was 263.17 mg/L, while they were 61.99 mg/L in the beverages purchased from the local grocery stores. And, to the almost samples the amount of caffeine was proportional to the amount of catechin.

        This study aimed to analyze beverage usage motives according to selection attributes of beverage shops. Questionnaires were completed by 509 persons living in the Seoul, Gyeonggido area. The results show significant differences by gender, age, and monthly income. Female customers stayed longer and spent more money than males. Younger customers (20’s, 30’s) stayed longer and visited beverage shops to meet friends. Those with higher incomes stayed shorter and visited beverage shop with company staff. In the factor analysis of selection attributes of beverage shops, there were four factors: ‘physical environment’, ‘economic benefit’, ‘specialized service’, and ‘approach convenience’. Two clusters, derived from selected attributes of beverage shops, were ‘highly involved group’ and ‘low involved group’. The ‘highly involved group’ was high income and highly educated, whereas the ‘low involved group’ was low income and low educated. ‘The highly involved group’ drank beverages in the office and school while the ‘low involved group’ drank beverages at home. The ‘highly involved group’ cited safety, comfort, pleasure, and happiness more than the ‘low involved group’ at beverage shops. Beverage shops should develop health beverages such as caffeine or sugar-controlled beverage for ‘the highly involved group’. Discounts for take-out beverages and promotional coupons should be used for the ‘low involved group’.

        The blending schemes of Saengshik powder with water were established to retain the dispersion stability of the Saengshik beverage in order to develop a ready-to-drink type product. The effect of the blending on the rheological properties and the dispersion stability of Saengshik beverage were determined. The Saengshik beverages, blended with low shear force for a short time, showed dilatant fluid characteristics, while those with high shear force for a long time had pseudoplastic fluid ones. The consistency of Saengshik beverage increased with the blending speed and time. Saengshik beverage blended at low shear showed rheopexy while becoming time independent by a highshear blending action. A logarithmic model fitted well to the changes in backscattering light flux with the rest time of Saengshik beverage. Based on sedimentation kinetics, the migration speed of clear front, and the thickness of sedimented layer, Saengshik beverage with maximum dispersion stability was obtained by a high shear blending at 15,120 rpm for 25 s.

        본 연구는 식품산업에서 큰 비중을 차지하고 있는 음료류에 대한 인공감미료 (삭카린나트륨, 아스파탐, 아세설팜 칼륨, 수크랄로스, 싸이클라메이트)의 함유현황 파악을 위한 동시분석법을 확립하였다. 희석 및 여과의 간편하고 효율적인 전처리 후 HPLC/MS/MS를 이용하여 5종 인공감 미료 동시분석 조건을 검토하였다. 컬럼은 C18(2.1 mm × 150 mm, 3.5 um), 이동상은 2% methanol (1 mM ammonium acetate)과 95% methanol (1 mM ammonium acetate)을 사용하여 농도구배 조건으로 각 성분을 분리하였으며 ESI/ SRM 방식으로 정량 분석하였다. 0.1~5.0 mg/L의 농도범 위에서 각 인공감미료 검량선은 1에 가까운 높은 직선성을 나타냈다. 검출한계, 정량한계는 각각 0.001~0.022 mg/ L, 0.004~0.073 mg/L로 저농도의 감미료 분석이 가능함을 확인하였다. 회수율은 92.76~113.50%, 정밀도는 10.91% 이하로 양호하였다. 이상의 결과로 본 분석법은 음료 중 인공감미료 분석에 적합하다고 판단되었다. 확립된 분석법으로 시중 유통 중인 음료 102건 분석한 결과 42건에 서 아스파탐, 아세설팜칼륨, 수크랄로스가 검출되었으며 삭카린나트륨과 싸이클라메이트는 검출되지 않았다. 검출된 인공감미료는 표시사항과 일치하였으며 사용대상과 사용량의 기준에 적합하였다.

        Surveys on the consumption of caffeinated beverages by high school students (n=886) were performed. Of the students, 97.0% consumed a variety of caffeinated beverages, including carbonated drinks (90.0%), processed milk and cocoa (79.0%), coffee (63.0), teas (52.1), energy drinks (16.4%) and nourishment drinks (15.5%). The frequency of intake per student was 8.2 times per week. Caffeine intake through the caffeinated beverages was 41.53 mg/day, which was accounted for by coffee (51.5%), carbonated drinks (19.6%), processed milk and cocoa (11.5%), teas (11.4%), energy drinks (5.0%) and nourishment drinks (1.1%). Students with high levels of stress, those who consumed snacks twice a day, and those who used a computer (or smart phone) for more than 3 hours per day showed significantly higher caffeine intake. The groups with high caffeine intake experienced heart palpitations, insomnia and pollakiuria. Students indicated that they consumed the caffeinated beverages for the taste (57.9%), waking up (18.0%), thirst (13.2%), etc. (10.9%). They tended to consume drinks with a high content of caffeine to sleep less. In addition, they rarely checked the label, and showed a lack of awareness of the caffeine contents in the beverages, which calls for education.

        Beverages can vary in their appropriateness depending on the context of their different uses; therefore, an intention to consume a beverage is likely dependent on the context of its use. This study associated the consumer acceptability of commercial beverage products examined in a previous study (Kim and others, 2013) with its appropriateness under different use contexts. Consumers (n=360) were divided into two conditions: blind and brand. Consumers rated appropriateness for 13 use contexts for each beverage product. The results indicated that the contextual appropriateness were significantly different among the beverage samples and seemed to be positively influenced by the acceptability of beverages. The beverages with higher liking scores were more appropriate in a greater number of contexts, including "when tired", "refreshing", and "rest". However, there were inappropriate contexts (e.g., "while weight watching", "after exercise", "with a meal", and "health care") regardless of degree of acceptability. In the brand condition, some differences in contextual appropriateness were observed when comparing results from the blind condition (e.g., "with a meal", "health care").

        비파엽을 첨가한 쌀음료의 개발에 있어서 과당, 크림, 그리고 비파엽 물 추출물의 농도는 최종 관능적인 맛과 기호도 모두에 유의적인 효과를 주고 있었으며, 비파엽 물 추출물 자체의 쓴맛과 이미를 감소시키는 주요한 첨가물은 과당이라고 결론지을 수 있었다. 그러나 비파엽을 첨가한 쌀음료는 대조구로 사용된 상용 쌀음료를 5점으로 하였을 때 반응 표면분석의 결과로 예측된 최고 점수가 5점이 약간 못 미치는 수준인 것을 보인다. 통계적 분석 방법의 결과인 Table 2의 전체 기호도 5의 수준에 도달하기 위한 비파엽 추출물의 첨가량에 대한 과당의 첨가량의 상관 관계를 유의성이 떨어지는 항목을 배제하여 회귀식을 단순화하여 과당과 비파엽 추출물만의 식으로 나타내고, 이를 근거로 하여 과당과 비파엽이 기준시료 총 기호도의 5점에 해당하는 수준을 도달하기 위한 상호간의 관계식을 구하였다. 그 결과 과당 첨가량 = 0.618 ×(비파엽 추출물 Brix 18 고형분량)2 + 0.406 × (비파엽 추출물Brix 18 고형분량)으로 계산되었다. 결론적으로 비파엽 추출물의 쓴맛을 감소하는 효과는 크림이 있으나 선호도는 과당의 첨가량이 비파엽 추출물을 포함하는 쌀음료의 기호도에더 큰 효과가 있음을 알 수 있었다.

        국내 유통 주류 95점에 대하여 에틸카바메이트 잔류실태 조사를 실시하였다. 탁주, 약주, 청주, 과실주를 비롯하여 소주, 브랜디 그리고 에틸카바메이트 잔류가 많이 보고되고 있는 리큐르 등을 대상으로 하였다. 액액분배를 통하여 정제하였으며, GC/MS/MS 분석법을 정립하였다. 카트리지(cartridge)나 농축 과정이 없기 때문에 식품공전에등재되어 있는 GC/MS 분석법보다 분석시간이나 소요비용 면에서 매우 효율적이었다. 정성한계는 1.3 ug/L이었으며, 정량한계는 4.0 ug/L이었다. 탁주, 약주, 청주에 대하여각각 0.63, 7.01, 14.11 ug/L의 평균 잔류량을 나타내 캐나다의 청주 허용기준 200 ug/L나 약주, 청주에서 논의되고있는 허용기준치 200 ug/L와 비교하여 보았을 때 안전한수준인 것으로 나타났다. 복분자주, 포도주에서는 각각 평균 1.66, 2.64 ug/L 검출되어 현재 캐나다, 체코에서 포도주허용기준치로 설정되어 있는 30 ug/L와 비교하여 보았을 때역시 안전한 것으로 나타났다. 과실주 중 매실주의 경우 평균 79.18 ug/L로 본 연구를 통하여 평가된 모든 주종 중 가장 높은 잔류량을 나타내었으나, 외국의 다른 유사 주종에대한 허용기준치 (예로서 캐나다의 경우 400 ug/L 과실 브랜디)와 비교하여 보았을 때 안전한 수준으로 평가할 수있었다. 증류식 소주, 일반증류주, 리큐르도 논의되고 있는기준치와 비교하여 보았을 때 안전한 것으로 조사되었다. 이러한 조사결과는 우리술의 에틸카바메이트 잔류실태가위험한 수준이 아니라는 근거 자료로 활용할 수 있을 것이며, 향후 이러한 유해물질의 지속적인 잔류조사 및 위해평가를 통하여 우리 술 및 전통발효식품의 품질 및 안전성을 확보해 나가야 할 것이다.

        This study was performed to investigate the consumption of coffee beverages and energy contribution ratios of coffee beverages and accompanying snacks by college students in Deajeon City and Chungnam Province in Korea. Questionnaire survey, dietary survey, and snack survey using food record method during 3-days were carried out. As a result, we found that 86.9% of male students and 75.6% of female students consumed coffee beverages usually, with no differences between the two groups. However, the frequency of coffee beverages consumed by female students out-numbered that of male students by 1 cup a day to 1-2 cups a week (p<0.05). Furthermore, male students most likely consumed coffee beverages at schools or academies, but female students consumed them at coffee shops (p<0.01). The reasons male students gave to consume coffee beverages were for scent, taste, fatigue, and to stay awake. Similarly, the reasons female students gave to consume coffee beverages were for scent, taste, habit, and to stay awake (p<0.01). Fully 58.1% of male students and 80.0% of female students ate snacks along with coffee beverages (p<0.01). Most male students substituted a coffee beverage and accompanying snack for a regular meal once a month. Female students were doing it at most 2-3 times a month (p<0.05). The mean daily dietary energy intake of male students was 1,924 kcal/d, and of female students was 1,518 kcal/d (p<0.001), which both were below the estimated energy requirements. Male students obtained 285.6 kcal/d and female students obtained 289.5 kcal/d from coffee beverages and accompanying snacks. There was a significant different in dietary intake of energy (p<0.05), calcium, and iron (p<0.001) for each ratio of reference intake between male and female students. The students who ate larger amounts of coffee beverages and accompanying snacks consumed less dietary energy, protein, calcium, and iron, respectively (p<0.05). These results show that many students consume coffee beverages regularly and obtain large amounts of energy from coffee beverages and accompanying snacks. It also shows that student's dietary nutrient intake tends to be poorer, as he or she obtains more energy from coffee beverages and accompanying snacks. Therefore, it is critical to monitor the influence of consumption of coffee beverages and accompanying snacks on the dietary nutrient intakes and health of college students, and to provide nutrition education about the proper consumption of coffee beverages and accompanying snacks based on scientific evidence.

        This study was done to analyze the contents of minerals and vitamins to compare the measured values of minerals, vitamins with labeled values of them in food labeling and to investigate the ratio of measured values to labeled values in 437 specimen with minerals and vitamins - fortified commercial beverages and liquid teas. Content of calcium and sodium in samples after microwave digestion was analyzed with an ICP-OES (Inductively Coupled Plasma Optical Emission Spectrometer) and vitamins were determined using by HPLC (High Performance Liquid Chromatography). The measured values of calcium were ranged 80.3~142.6% of the labeled values in 21 samples composed calcium - fortified commercial beverages and liquid teas. In case of sodium, measured values were investigated 33.9~48.5% of the labeled values in 21 sports beverages. The measured values of vitamin C, vitamin B2and niacin were ranged 99.7~2003.6, 81.1~336.7, 90.7~393.2% of the labeled values in vitamins - fortified commercial beverages and liquid teas, 57, 12, 11 samples. To support achievement of the accurate nutrition label, there must be program and initiatives for better understanding and guidances on food labelling and nutrition for food manufacture.

        Rice alcoholic beverages, cheongju and beopju, which are recorded in "Koryodokyung", "Koryosageolyo", and "Koryosa", were used in national and royal ceremonies, and yakju was used in the Palgwanhoi ritual. In the late 11thcentury, King Munjong imported hwaju and haenginjabeopju from the royal family of the Song Dynasty. Alcoholic beverages in the early 12thcentury included the medical use for kings, such as gyehyangeoju, which the Emperor of the Song Dynasty sent to King Yejong, baekjainju, which was sent to King Myeongjong for his health, and yangju, which is goat milk fermented alcohol from the nomads in the northern regions. In the early13th century there was also dongrak, which is a horse-milk fermented alcohol, grape wine sent from Yuan to King Chungryeol in the late 13th century, and sangjonju, a type of special cheongju sent from Yuan in the early 14th century. Baekju from Yuan was recorded in oral traditions, which suggests that soju, which is distilled cheongju, was consumed in the late 14th century. Gold and silver wares for alcoholic beverages had important political, social, and economic meanings as national gifts to other countries and internally as the king's royal gift to his subjects. In the late 14th century, soju was prohibited, and the use of gold and silver wares for alcoholic beverages was banned at the same time. This study examined the historical characteristics of the use of traditional rice alcoholic beverages, the emotional preference for foreign alcoholic beverages, and the gold and silver wares used for alcoholic beverages Koryo Dynasty.
