This study examined the quality characteristics and antioxidant properties of sword bean tea available in domestic markets. Each product of sword bean tea had distinct appearance characteristics. The color, pH, brownness, and turbidity of the tea varied significantly across different products, with tea bags showing higher levels of brownness and turbidity. The total polyphenol content of hot water extraction ranged from 165.13 to 517.69 mg gallic acid equivalents (GAE)/100 g sample for pod tea, 999.36 to 2,054.74 mg GAE/100 g sample for tea bag tea, and 74.62 to 275.00 mg GAE/100 g sample for grain tea, respectively. Similarly, the total flavonoid content, measured in terms of catechin equivalents (CE), ranged from 39.51 to 65.00 mg CE/100 g sample for pod tea, 86.57 to 253.63 mg CE/100 g sample for tea bag tea, and 32.94 to 38.63 mg CE/100 g sample for grain tea, for hot water extraction. The DPPH and ABTS radical scavenging activities of pod tea were 95.68 to 276.19 mg TE/100 g sample and 270.87 to 804.21 mg trolox equivalents/100 g sample, respectively, for hot water extraction. These results suggest the need to establish quality standards to ensure consistent quality of sword bean tea.
Sino-Vietnamese pronunciations are the way Vietnamese people read Chinese characters. Going through the process of formation and development, they have become an important part of the Vietnamese language. In the field of literature, Sino-Vietnamese sounds are closely related to Tang poetry in China and Tang poetry in Vietnam. Tang poetry is a Chinese literary achievement consisting of systems of authors and works with strong influences on Sinosphere countries in medieval time such as Vietnam, Japan, and Korea. In Vietnam, Tang poems are read by Sino-Vietnamese pronunciations, which ensure tonal harmony. Scholars in China, Vietnam, and other countries have studied Tang poetry in terms of phases, authors, styles, and ideologies. However, there has been no attempt to investigate the characteristics and functions of Sino-Vietnamese pronunciations in Tang poetry. In this paper, we study the characteristics and functions of Sino-Vietnamese pronunciations in Tang poetry in China and Vietnam based on the comparison of similarities and differences of reading Tang poems by Sino-Vietnamese pronunciations and by contemporary Chinese by means of surveying 133 poems in Three hundred Tang poems. Comparative data on the ability to keep Tang poetry’s same tone rules and Tang poetry’s rules of Sino-Vietnamese pronunciations and contemporary Chinese show that both types of reading can either remain or break the rules of this poetry type, but their proportions are different. 54% of poems by Sino-Vietnamese pronunciations keep Tang poetry’s same tone rules and Tang poetry’s rules while the rate of poems by contemporary Chinese reading is 34%. The number of poems in which Sino-Vietnamese pronunciations can keep the rules while contemporary Chinese cannot is 28 (accounting for 21%). The number of poems in which contemporary Chinese can keep the rules while Sino-Vietnamese pronunciations cannot is 1 (accounting for 1%). The survey results show the remarkable advantages of Sino-Vietnamese pronunciations regarding the ability to keep Tang poetry’s same tone rules and Tang poetry’s rules compared to the contemporary language used by Chinese people. This is attributed to the fact that Sino-Vietnamese pronunciations are close to the sounds of Tang poetry and still preserve the tone patterns. With such a characteristic, in the process of cultural adaptation, Vietnamese people use Sino-Vietnamese pronunciations to compose, translate, as well as appreciate and study Tang poems. There were thousands of authors, and there were poetry collections of thousands of Tang poems written in Sino-Chinese in medieval time. The similarities and differences between Sino-Vietnamese pronunciations and contemporary Chinese in Tang poems prove cultural adaptation among nations, contributing to preserving the diverse beauty of valuable literary works of humankind.
In the current study, 109 commercial nut samples were collected from different Korean markets and analyzed for the contamination of 5 different mycotoxins (aflatoxin, ochratoxin A, deoxynivalenol, zearalenone, and T-2 toxin) using ELISA kits. The results revealed that the most frequently detected mycotoxin was zearalenone (n=36, 33%), followed by aflatoxin (n=31, 28.4%) and ochratoxin A (n=30, 27.5%). Deoxynivalenol and T-2 toxin were also detected in 22 (20.3%) samples, respectively. Among 109 nut samples, 33 samples (30.3%) were contaminated only with one kind of mycotoxin, whereas 43 samples had at least 2 kinds of mycotoxins. Two samples were contaminated with as many as 4 different mycotoxins, and they were both walnuts. Although the monitoring results revealed the amount of aflatoxin contamination was under the safety criteria, there is no current safety guideline for other kinds of mycotoxins or multiple contaminations in Korea. Therefore, further studies should be performed to reveal the distribution of mycotoxin in different foods and propose appropriate safety guidelines for Korean markets.
본 연구에서는 축산식품인 편육을 대상으로 황색포도상 구균의 성장예측모델을 개발하였다. 편육에서 황색포도상 구균의 성장패턴은 4, 10, 20, 37oC의 보관온도에서 측정 되었으며, 황색포도상구균은 각각의 저장 온도에서 모두 증가하는 것으로 나타났다. 편육에 오염된 황색포도상구 균의 생육결과를 토대로 Baranyi model을 이용하여 유도 기(LPD)와 최대성장률(μmax)을 산출한 결과, 유도기는 4, 10, 20, 37oC에서 212.81, 79.67, 3.12, 2.21 h으로 온도에 반비례한 것으로 나타났고 최대성장률은 같은 보관온도에 서 0.004, 0.009, 0.130, 0.568 log CFU/g/h으로 온도에 비 례한 것으로 조사되었다. 2차 모델은 μmax의 경우, square root model, LPD는 polynomial equation을 사용하여 산출 하였고, 개발한 모델의 적합성을 평가하기 위해 통계적 지 표인 RMSE 값을 계산한 결과, 비교적 0에 가까운 0.42로 도출되어 모델이 적합한 것으로 확인되었다. 따라서 개발된 모델이 편육에 대한 황색포도상구균의 성장 예측모델로 사용 가능하다고 판단되어지며, 편육에서의 식중독을 예방하고 미생물학적 위생관리기준을 설정하는데 기초자 료로 활용될 수 있을 것으로 사료된다.
This study investigated the quality characteristics of fermented wines using a selected strain to obtain basic data on sugarfree tomato wine production. Alcohol content of the tomato and commercial wine was 8.2~12.9%, whereas tomato wine showed a relatively low alcohol content of 8.2%. For total phenol content, Chile wine showed the highest value of 162.89 mg/100 g, followed by persimmon wine at 122.33 mg/100 g. Tomato wine showed a relatively high total phenol content of 96.57 mg/100 g. In all sections, xylose was not detected, although there were differences in free sugars depending on each product. Acetic and citric acid contents were highest in tomato wine, and the six kinds of commercial wine and tomato wine showed acetic acid content of 800.6 mg/100 g and citric acid content of 1,064.4 mg/100 g. The total free amino acid content was 100.63 mg/100 g in tomato wine, which was 2~3 times higher compared to that in commercial wine (26.33±52.15 mg/100 g).
Our objective in this study is to assess the safety of docosahexaenoic acid (DHA) fortified milk of dairy cows fed feeds containing protected fish oil treated with formaldehyde by analyzing formaldehyde concentration in commercial milk and DHA fortified milk of dairy cows fed formaldehyde treated feed. There are 3 milk samples in this study: Commercial milk (CM), DHA fortified milk for Kid (DHA-K) and DHA fortified milk for Baby (DHA-B). We confirm the fresh quality of these three samples by physicochemical tests. In fat content result, three groups are significantly different at the p < 0.05 by Duncan's multiple range test, but fat content of group DHA-K is about half the level of the other two groups. Protein content of group DHA-K is 1% higher than other two groups. According to the analysis result of DHA content of DHA fortified milk, DHA content of DHA-B is two-fold higher than DHA-K. Similar pattern was seen in the intake based on age. According to HPLC analysis result of formaldehyde concentration in milk, commercial milk and DHA fortified milk are between 0.013 ppm and 0.057 ppm which is formaldehyde standard level in fresh milk settled in WHO (World Health Organization). Three groups have no significantly differences at the p < 0.05 by Duncan’s multiple range test. For this reason, it can be concluded that there is no transition of formaldehyde from dairy cows fed formaldehyde treated feeds to its produced milk. Safety about formaldehyde of DHA fortified milk of dairy cows fed formaldehyde treated feeds is considered similar to commercial milk.
This study was carried out to evaluate the microbiological characteristics of retail chicken meats stored under various conditions. Nine of whole chickens and nine of chicken breasts were used for bacterial analysis. Each chicken meat was divided into subsamples of 25 g each followed by storage at room temperature (25℃), refrigeration temperature (4 ℃), and freezing temperature (—20℃) for 180 min, 5 days, and 3 days, respectively. The standard plate counts were performed for the enumeration of the total aerobic bacteria. The number of aerobic bacteria was gradually increased by 1 log in samples held at the room temperature for 180 min. There was statistical difference in the number of bacteria between at 0 min and at 180 min of storage. For samples stored at 4℃ for 5 days, the number of bacteria was increased from 5.11 to 7.26 log CFU/g in chicken breast and 3.83 to 6.04 log CFU/g in whole chicken with statistical difference. No significant changes were observed in frozen chicken. The results of this study may provide useful information to consumers for proper storage and safe handling of chicken meats.
This research aimed to investigate the quality of conventional salted cabbages. Here, we studied the general characteristics and microbiological aspects of purchased salted cabbage samples from 15 companies. The purchased salted cabbages used a sun-dried salt, but two samples used a mixture of sun-dried salt and processed salt. There were 4 times of washing, 3 steps of washing after automatic washing, and 3 steps of washing after bubble washing as washing methods for the salted cabbages and ground water was used as the washing water. Also, three samples received HACCP certification. The salt contained in the purchased salted cabbages ranged from 0.5% to 2.0%, representing low salted cabbages. The pH of the purchased salted cabbages ranged from 5.32 to 6.47, and hardness ranged from 1, 997g to 3, 665g. Rewashing was necessary before using some salted cabbages due to foreign materials such as insects, soil, etc. Total bacterial counts of the purchased salted cabbages ranged from 3.36 log to 6.06 log and coliform bacteria ranged from below 1 log to 6.05 log, whereas other pathogens were not detected.
시중 즉석 면류의 관능적 성질과 back extrusion test 데이터에 대하여 partial least square regression(PLSR)을 실시하였다. 즉석유탕면 8종과 즉석비유탕면 2종에 대한 관능적 속성으로서 경도(A), 탄성(B), 껄끄러운 정도(C), 이에 박히는 정도(D), 굵기감(E)를 검사하였고, 실험 데이터로 힘-변형 곡선 전체를 사용하였다. PLSR의 회귀계수는 힘-변형 곡선의 압착단계, 항복단계, 압출단계로 크게 구분되어 각 관능속성에 대한 특유의 양 또는 음의 효과를 나타냈다. PLSR의 상관계수는 E>D>A>B>C, 오차(root mean square error of prediction expressed in sensory units)는 D>C>E>B>A, 예측능(relative ability of prediction)는 D>C>E>B>A 로 나타나 종합적으로 ‘이에 박히는 정도’가 PLSR의 적용에 가장 우수하게 나타났다. ‘경도’는 예측능은 낮았지만 상관성은 높아서 시료간 순위의 결정에 합당하게 평가되었다.
시중에 유통되고 있는 33종류의 식용유지를 대상으로 하여 benzo[a]pyrene의 함량을 모니터링한 결과 압착올리브유 0.5-1.4 μg/kg, 혼합올리브유 0.6-1.0 μg/kg, 참기름 0.9-1.3 μg/kg, 대두유 0.6-3.3 μg/kg, 옥수수유 0.5-1.1 μg/kg, 해바라기유 1.2, 1.7 μg/kg, 홍화유 1.0, 2.1 μg/kg, 유지가공품 1.0, 1.4 μg/kg 수준으로 검출되었다. 대부분의 시료에는 benzo[a]pyrene 기준치인 2.0 μg/kg를 초과하지 않았지만, 미국산 대두유와 미국산 홍화유에서 각각 3.3 μg/kg, 2.1 μg/kg로 두 종류에서 기준치 이상 검출되었다. Benzo[a]pyrene은 식용유지로 제조되기 이전에 원재료가 오염되었거나, 가공공정, 환경으로부터 노출되는 등 노출경로는 다양하다. 정제과정인 deodorizing 과정이나, bleaching 과정에 의해서 benzo[a]pyrene의 함량이 감소되며, 압착올리브유와 혼합올리브유의 실험결과에서 정제올리브유가 혼합되어 있는 혼합올리브유의 benzo[a]pyrene의 함량이 낮게 나타났음을 확인할 수 있었다. Benzo[a]pyrene의 함량은 연기성분에서도 영향을 받을 수 있으므로 원재료를 건조시키거나, 볶는 과정에서 밀폐된 상태로 진행하는 것보다 개방된 상태에서 진행하는 것이 benzo[a]pyrene의 생성을 억제할 수 있을 것으로 판단된다.
전국 4개 대도시(서울, 부산, 대전, 광주)를 중심으로 시중에서 유통되는 김밥 중 황색포도상구균의 오염도 자료와 환경조건별 미생물 변화를 예측하는 Food MicroModel^R을 활용하여 김밥 중 황색포도상구균으로 인해 식중독이 발생하지 않을 유효기간을 산정하였다. 분식점(n=79), 백화점(n=10), 편의점(n=20)으로 구분하여 분석한 여름철 평균 황색포도상구균 모니터링자료(검출률 각각 39.2%, 30%, 15%)를 시중에서 유통되는 김밥 중 황색포도상구균의 최대 섭취유효시간 산정에 활용하였으며, 모델 운영 시 김밥 중 황색포도상구균으로부터 enterotoxin이 생성되는 균수인 2×^7에 도달하는데 ℃~ 요되는 시간을 최대섭취유효시간으로 추정하였다. 하절기의 환경조건을 고려하기 위하여 ℃ 온도 조건하에서, pH, NaCl %, aw 0.99의 조건을 적용하였다. 추정된 최대섭취유효시간은 일반적인 성인이 김밥 1인분(171 g)을 섭취하는 것을 기준으로 하였을 때 구입 이후 28~30℃에서 방치할 경우 분식점은 3.9~4.6시간, 백화점 6.7~7.9시간, 편의점은 7.4~8.7시간이었다. 또한 구매한 김밥이 황색포도상구균에 기인한 식중독으로부터 안전할 최대섭취 유효시간은 99% 안전 확률에서 여름철 분식점 자료를 근거하여 30℃에서 1.9시간이었으며 15℃인 경우는 17.7시간이었다.
This study was conducted to determine the content of heavy metals in canned foods and soft drinks available on the Korean markets. Trace metals (Pb, Cr, Cd, and Sn) were detected in 24 kinds, 120 samples by Atomic Absorption Spectrophotometer. The average concentration of heavy metals in canned foods was in the order of Sn (6.930 ppm)$gt;Cr (0.050 ppm)$gt;Pb (0.030 ppm)$gt;Cd (0.008 ppm), which was the same order in soft drinks as Sn (3.519 ppm)$gt;Cr (0.080 ppm)$gt;Pb (0.024 ppm)$gt;Cd (0.001 ppm). The total contents of heavy metals in canned fruits and fiuit juices were relatively higher than those in cans and drinks made of vegetable and fish. It can be supposed that the high acidity owing to the organic acid of fruit itself promotes to extract metals from can materials, and although fish usually contains more heavy metals than vegetables, canned fish revealed low level because internal organs and most of skin which had more heavy metals than meat were removed throughout canning process. Because processed foods such as canned foods and soft drinks are very popular with the children and adolescence according to the change of life style and eating habit, and the possibility of exposure to heavy metals by the habitual intake of these is increasing simultaneously, it is suggested that more practical study about the process of exposure and the amount in each step is needed for the assessment of safety.
Recently there has been an increasing amount of foreign livestock products distributed in the domestic market due to the market opening. Some vicious dealers sell the foreign beef in the trade name of the native beef during the final distribution step to arouse the social criticism frequently. In this report, we investigated a method to distinguish the native beef from the foreign one scientifically using the PCR-RAPD, a recent gene technique. Hygienical safety was also examined using a microbiological test for toxicity of Escherichia coli O157:H7 and the food poisoning bacteria. The conditions of DNA amplification for the PCR analysis were 1 × Taq polymerise buffer, 1.5 mM MgCl₂, 50 uM dNTP, 100 ng primers, 2.5 unit Taq polymerise and 5-20 ng template DNA, with the final volume of 50 Etl. The size of the amplified product was detected mostly in the range of 0.5-2.0 kbp. The size of DNA, gene marking factor, which could be a criterion distinguishing the native beef from the foreign one, appeared approximately 1.2 kbp. The native beef was distinguished from the foreign beef with more than 90% of confidence by the gene marking factor. This method was expected to be useful in the breed discrimination between the native beef and the foreign one. The hygienical test results showed that, fortunately, neither Salmonella spp. and Listeria monocytogenes which form a principal cause of the food poisoning nor Enterohemorrhagic Escherichia coli : EHEC which have provoked a recent social disturbance, were detected at all.
Microbial distribution as well as content of salt and preservatives in side dishes was investigated by analyzing cell count of viable cells, coliform bacteria and food poisoning bacteria of sliced squid bokum and anchovy bokum, purchased at 17 dift'erent department stores and 2 different traditional markets in Seoul, which are most preferred by many consumers to any other side dishes available in the market. 6.2 × 10³-1.2 × 10^5 cells/g of viable cells was detected in 19 different samples of the sliced squid bokum, among which samples collected at the traditional markets counted the highest number of viable cells. 16 samples of the sliced squid bokum and 14 samples of the anchovy bokum contained 10³-10^8 cells/g of coliform group. However food poisoning bacteria were not detected in all the samples tested. Salt content was 2.42-4.89 %w/w and 2.28-6.46 %w/w for the sliced squid bokum and the anchovy bokum respectively. Analysis of preservatives by HPLC such as sorbic acid, benzoic acid, dehydroacetic acid and another 6 kinds of esters resulted that 1.0× 73.8 mg/100 g of sorbic acid was detected in the 19 samples of the sliced squid bokum, while only 6 samples of the 15 anchovy bokum samples contained sorbic acid.
