Bacteriological quality evaluations were carried out for rice rolled in laver(Kimbab), Hamburger, Walnut cake and Chinese noodle (Jajangmyun), which were on sale in April and May 1995, in May and July 1997 and in January 1999, at 20 different resting places on Kyung-Bu, Ho-Nam, Joong-Bu and Young-Dong Highway in Korea. Food poisoning bacteria were not detected. However numerous coliform bacteria were dectected saying that the sanitary condition of foods on sale at resting places of the highways was not hygienic. There exited 8.8 × 10⁴∼6.6 × 10^5 cells/g of coliform bacteria in all the Kimbab sold in 1995. As for Hamburger, 1.8 × 10²∼4.7 × 10⁴ cells/g of coliform bacteria proliferated in all the samples. In 1997, E. coli was found in 16 cases and 21 cases respectively out of 22 Kimbab samples, Hamburger dealing at 7 resting places out of 14 were contaminated with 1.7 × 10²∼1.9 × 10^7 cells/g of coliform bacteria and Hamburgers dealing at 2 resting places were infected by E. coli. In contrast to the Kimbab and Hamburger, all the 6 Walnut cake samples were free from the microbial pollution exhibitory that their hygienic condition was satisfactory. 3 samples out of 6 Jajangmyun were contaminated by 7.1 × 10²∼2.0 × 10³cells/g of coliform bacteria, but E. coli was not detected. Compared Kimbab sold in 1995 and 1997 with 1999, Kimbab sold in it can be said that hygienic control for Kimbab should be performed more strictly during hot season than during cold season. Walnut cake was the safest against microbial contamination, followed by Jajangmyun, Hamburger and Kimbab in decreasing order, indicating that foods with mixed ingredients such as Kimbab and Hamburger were more susceptible to microbial infection, so that a more systematic safety control is needed for such foods during cooking, processing and distribution.

국내에서는 식품수급표와 국민영양조사가 지난 수십년에 걸쳐 두개의 중앙부처에서 각각 수행되어 왔다. 그러나 근년에 들어와 두가지 통계자료간의 격차가 수용할 수 없는 수준에 도달하고 있다. 그 이유로서는 지난 30년간 공업화 및 도시화에 따른 식습관의 급격한 변화에도 불구하고 조사방법의 개선이 뒤따르지 못했기 때문으로 추정된다. 따라서 현재 이용가능한 국민영양조사에 의한 식품소비량 데이타를 식품수급표를 감안하면서 최적화하였다. 최근 1991-95년 기간중 개별 식품항목의 조정 소비량이 곡류, 감자류, 당류제품, 두류, 견과종실류, 과일류, 채소류, 육류, 난류, 우유제품, 유지류 및 수산물에 대하여 제안되었다. 소맥제품, 두류제품, 김치류 및 우유제품을 포함하는 가공식품에서는 그들의 원료성분으로 계산하기 위한 잠정적인 환산계수를 제안하였다. 식품들의 공급량 데이타와 섭취량 데이타 간의 큰 편차는 국민영양조사에서 계절적 차이와 아울러 가공식품 및 외식에 의한 섭취량이 무시되었기때문으로 지적되었다. 여기에서 제안하는 조정된 식품소비량 데이타는 앞으로 새로운 절차에 의한 국민건강영양조사 결과가 나와 검증될 때까지 평균소비량을 위한 국가대표치로 활용되기를 기대한다.

In order to obtain the data for extreme food intake by Koream adults, the data of adult dietary survey undertaken in 1995 were used through statistical treatment, taking into account of dietary habits. Various food commodities amounting to 159 items were classified into 14 food groups and fractiles of 90th and 95th percentile of individual food items were computed on the assumption that the food consumption pattern exhibits a normal distribution. Most of the food items showed the ratio of fractiles to mean intake in the range of 2.0∼3.0 while the ratio greatly deviated from these values in items such as seasonings, spices, nuts, seeds and favorite beverages as well as most commonly-eaten or rarely-eaten foods.

he purpose of this presents is to investigate, using natural food extracts(Green tea; Camellia sinesis, Du'chung; Eucommia ulmoides Oliver, Eu sung cho; Houttuynia cordata Thunb, Sam back cho; Saurus Chinensis, Baek hwa sa seal cho; Oldenladia diffusa Roxb., Laver; Porphyra tenera, Sea mustard; Undaria pinnatifida and Sea staghorn; Condium fragile) and juices(Sweet pepper; Capsicum annuum var. angulosum, Kale; Brassia oleracea var. acephala, Cucumber; Cucumis satiuus, Onion; Allium cepa, Tomato; Lycopericon esculentum, Maesil; Prunus mume, Plum; Prunus salicina and Grape; Vitis spp.), the effect of natural plant components on the nitrite-scavenging under the different levels of pH. From the above mentioned extracts and juices, tl1i; content of vitamin C was detected, containing 65.1∼77.1 ㎎/100 g, at the highest level in the Green tea, and followed by vegetables and fruits in order. The nitrite scavenging effect of teas, medicinal plants, and seaweed extracts, in the reaction system under the condition of pH 1.2, were 57.0∼100%, 50.0∼100%, and 18.0∼99.0%, respectively. Especially, the nitrite was scavenged to the level of 100%1 when 10 ㎖ of kale and 5 ㎖ of maesil juice

From the teas and medicinal plants, there was a positive response of NDMA formation; however, from the seaweed extracts, there was a negative response of the inhibition effect of NDMA formation, and as the pH of reaction fluids and the amount of materials increase, the inhibition of NDMA formation was strengthened. The inhibition ratios by the level of pH are as follows: under pH 1.2 vegetable juice were 57.6∼99.7%; and fruits were 35.9∼99.7%; under pH 4.2 vegetable juice were 55.0∼97.5% and fruits were 21.3∼96.8%. All of the materials observed has been proved and shown the inhibition effect of NDMA formation.

This study was carried out to propose a simple method for the extraction of seven tar dyes such as tartrazine, sunset yellow FCF, amaranth, erythrosine, allura red, brilliant blue FCF and indigo carmine using aminopropyl amine cartridge and to determine the content of the dyes in candies, soft drinks, ice bars and okchuns produced in Korea. The tar dyes were simultaneously analyzed by reverse phase high performance liquid chromatography(HPLC). The recovery rates of the dyes ranged from 65.8% to 99.6%. The contents of the dyes in candies, soft drinks, ice bars and octhuns were N.D.-50.1 mg/kg, N.D.-49.9 mg/kg, N.D.-56.0 mg/kg and N.D.-867.3 mg/kg, respectively. The types of the dyes used most frequently for candies, soft drinks and ice bars were tartrazine, brilliant blue and amaranth, respectively. Of the samples, tartrazine was used frequently, and indigo carmine was not used at all.

A study was carried out to establish a detection method for irradiated black and white pepper. Samples were packed in polyethylene bags and irradiated with 2.5, 5, 7.5, 10 and 15 kGy using a Co-60 irradiator. The samples were suspended in water, and alkalized with sodium hydroxide solution. Apparent viscosity was determined after heat gelatinization using a Brookfield DV-III rotation viscometer at 30 with 30, 60, 90, 120, 150, 180, and 210 rpm. Means and standard deviations of the viscosities of all samples decreased by increasing the stirring speeds. The viscosities increased in all samples by increasing the concentration. Regression expressions and coefficients of viscosity which decreased with increasing irradiation dose of 10% and 13% black pepper, and 7% and 10% white pepper were 0.9531 (y=-131.29x+1,769.0), 0.9725 (y=-351.33x+4,036.0), 0.9731 (y=2,208.0e^(-0.3546x)), and 0.9959 (y=5,116.0e^(0.2887x)), respectively, at 120 rpm. This trend was similar for all stirring speeds. These results suggest that the detection of irradiated black and white pepper at various doses is possible by the viscometric method.

아플라톡신 생성균의 생육을 억제할 수 있는 미생물을 분리동정하고 진공동결 건조한 대사산물로부터 길항물질을 분리하였다. 대두로부터 아플라톡신 생육을 저해하는 길항균을 분리하였으며, 그 균은 Bacillus subtilis로 동정되었다. Bacillus subtilis는 아플라톡신 생성균에 대한 길항물질을 생산하였으며 MeOH추출, 실리카겔 흡착 크로마토그래피법, Sephadex LH-20 크로마토그래피법으로 길항물질을 분리하였다. 아플라톡신 생성균인 Asp. flavus와 Asp. parasiticus의 생육은 길항미생물인 Bacillus subtilis가 생산하는 길항물질에 의해 강하게 저해되었으며 이는 아플라톡신 오염방지를 위하여 효과적인 생물학적 방법일 것이라 기대된다.

Seventy-four Vibrio strains were isolated from imported frozen seafoods and identified according to their physiological and biochemical properties. They included two V. cholerae non-0l sp., two V. diazotrophicus sp., one V. hollisae sp., five V. natriegens sp., eight V. fluvialis sp., and four V. nereis sp. Two of them were not identified as Vibrio species. When these strains were tested using API-20E ket for identification, however, only the results for two V. cholerae and five of the V. fluvialis strains matched the results obtained previously. Due to the importance of detecting V. cholerae from foods, phylogenetic identification of the strains was attempted based on restriction fragment length polymorphism (RFLP) of the 16S rDNAs amplified by PCR. The results suggested that the two strains had identical RFLP patterns which were more closely related to that of V. proteolyticus than V. cholerae. The problems associated with identification of pathogens originated from seafoods demand development of accurate and rapid identification methods.

Zebrafish(Brachydanio rerio)를 실험어류로 하여 phosphamidon과 profenofos의 생물농축계수(bioconcentration factor: BCF)와 배설속도상수(depuration rate constant) 및 LC$_{50}$를 측정하였다. Phosphamidon의 24, 48, 72, 96시간 LC50 모두 l00 mg/l 이상으로 측정되었다. Phosphamidon 1 mg/l(고농도)와 0.2 mg/l(저농도)에서 어류 체내에서의 농축정도는 두 농도군에서 각각 12시간 이후에 정류상태에 도달하여 168시간동안 거의 일정하였고, BCF값도 12시간에서 16시간 사이에 고농도(0.89, n=7)와 저농도(0.96, n=7)모두 1미만으로 낮게 나타났다. Phosphamidon의 배설속도상수는 고농도와 저농도에서 각각 0.21 h-1과 0.18 h-1 이었고, 반감기는 각각 3.30및 3.85시간으로 측정되었다. 고농도와 저농도에서 각각 12시간 및 8시간 이후에는 g당 0.07 및 0.04 $\mu\textrm{g}$이하로 떨어져 대부분 배설된다는 것을 알 수 있었다. Profenofos의 24, 48, 72, 96시간 LC50는 각각 2.9, 2.6, 2.2, 2.O mg/l로 측정되었다. Profenofos의 96시간 LC$_{50}$ 농도의 1/100농도(0.02 mg/l)와 1/500농도(0.004 mg/l)에서 어류체내에서의 농축정도는 phosphamidon과 마찬가지로 12시간 이후에 정류상태에 도달하여 168시간동안 거의 일정하였고, BCF값은 12시간에서 168시간 사이에 96시간 LC$_{50}$농도의 1/100농도와 1/500농도에서 각각 111.3(n=7)과 141.9(n=7)로 측정되었다. Profenofos의 배설속도상수는 96시간 LC50 농도의 1/100농도와 1/500농도에서 각각 0.10 $h^{-1}$과 0.09$h^{-1}$h-1이었고, 반감기는 각각 6.93 및 7.70시간으로 측정되었다. 각각의 농도에서 12시간 및 8시간 이후에는 g당 0.19$\mu\textrm{g}$ 및 0.18$\mu\textrm{g}$이하로 떨어짐을 알 수 있었다. Phosphamidon과 profenofos의 급성어독성은 profenofos가 높았고, BCF profenofos가 phosphamidon보다 약 100배 정도 높게 나타났으며, 배설속도는 phosphamidon이 profenofos보다 약 2배 정도 빨랐다.

Phosphamidon의 가수분해속도상수는 25。C, pH 4, 7 및 9에서 각각 0.0020, 0.0022 및 0.0049이었고, 40。C에서 각각 0.0040, 0.0050및 0.0150으로 측정되었다 같은 pH에서 온도가 높을수록 촉진되었으며, pH 9의 염기성조건에서는 15。C상승에 반감기가 약 3배 정도 빨랐다. 또한 같은 온도에서 산성(pH 4)과 중성조건(pH 7)에 비해 염기성조건에서 가수분해반응이 약 2∼4배 정도 빨랐다. Profenofos의 가수분해속도상수는 25。C, pH 4, 7 및 9에서 각각 0.0022, 0.0047 및 0.0860이었고, 40。C에서 각각 0.0031, 0.0086 및 0.1245로 측정되었다. Profenofos의 가수분해는 phosphamidon과 마찬가지로 같은 pH에서 온도가 높을수록 촉진되었으며, 같은 온도에서 산성과 중성조건에 비해 염기성조건에서 가수분해반응이 약 15∼40배 정도 빨랐고 반감기가 모두 8시간 이내로 가수분해반응이 현저하게 일어났다. Profenofos의 가수분해속도가 phosphamidon보다 빠른 것을 알 수 있었다. 가수분해에 의한 분해산물을 확인하고자 GC/MS분석을 한 결과 phosphamidon의 분해생성물은 m/z=153의 O, O-dimethyl phosphate(DMP)와 m/z=149의 N, N-diethylchloro acetamide로 추정된다. Profenofos의 분해생성물은 m/z=208로 4-bromo 2-chloro phenol과 m/z=240으로 O-ethyl S-propyl phosphate로 추정된다.

The subacute toxicity of xylooligosaccharide (XO) was evaluated in SD rats. Groups of 60 male and 60 female rats were orally administered with 0, 333, 1000 or 3000 mg/kg of XO for 13 weeks. The changes of body weight, food and water consumption were investigated for 17 weeks, while heamatological values and histopathological findings were investigated at the end of the 13 weeks and 17 weeks including 4 weeks of recovery periods. No death and toxic effects were observed during the test periods. There were statistically significant changes in several parameters, but these change had no direct relationship to dosage. Clinical changes were general occurrence and no specific toxicity was related to XO. Gross necropsy and histopathology revealed that no target organs were found in the treated mouse with XO. According to the results, no-observed effect level of XO is estimated to be above 3000 mg/kg.

Lithospermum erythrorhyzon has been used as a red fooddye and traditional Chinese medicine to treat wounds, skin diseases and burns. Platelet activation plays an important role in thrombosis and haemostasis. Here, we studied the inhibition of platelet activation and its active compound from the root of Lithospermum erythrorhyzon. Its ethyl acetate extract inhibited the aggregation of washed rabbit platelets induced by collagen or thrombin. Five naphthoquinone pigments, shikonin, acetylshikonin, isobutylshikonin, α-methyl-n-butylshikonin and (β,β-dimethylacrylshikonin were isolated by means of high pressure liquid chromatography. The structures were determined by comparison of their proton nuclear magnetic resonance spectra. The potency of their inhibition was in the following order : β,β-dimethylacrylshikonin≥α-methyl-n-butylshikonin$gt;isobutylshikonin$gt;acetylshikonin$gt;shikonin. It is suggested that the size of the aliphatic hydroxy group of shikonin is important for the enhancement of potency.

Nine strains of pathogenic Vibrio sp. of clinical and environmental origin were examined for the degradation of gelatin, casein and hemolysin which is important to the virulence of this bacterium. Culture filtrates of all nine strains of Vibrio exhibited proteolytic activities. Especially, four strains of V. parahaemolyticus and one V. alginolyticus showed strong gelatin-degrading activity. In terms of hemolytic activity, three V. parahaemolyticus and V. mimicus showed strong β-hemolysis whereas those of strains of V. alginolyticus, V. fluuialis, V. uulnificus examined lacked this activity.

V. parahaemolyticus possessed an extracellular alkaline protease activity during the stationary growth phase. Various factors such as nitrogen sources, the concentration of NaCl and metal ions were investigated for optimizing the production of alkaline protease from V. parahaemolyticus ATCC 17802. Among the nitrogen sources tested skim milk showed the distinct increase of the activity and the activity was the highest at 2% in final concentration after 60 hours incubation. The addition of NaCl and metal ions did not increase the alkaline protease activity. CoC1₂, CuC1₂, and HgCl rather highly inhibited alkaline protease production.
