This study investigated the redistribution of headspace volatile compounds in a plant-based protein drink supplemented with flavor compounds with sweet-brown note. The volatile profiles of the control (only protein drink), flavoring (F), and the protein drink supplemented with flavoring (PF) were evaluated for deviations from additive effect. Principal component analysis showed that, while some PF samples reflected flavoring characteristics, others remained close to the control, suggesting that flavor expression could not be fully explained by simple flavoring addition. A comparison of the expected and observed volatile levels confirmed non-linear behavior, with overall suppression as the dominant effect. An off-flavor-anchored redistribution map further revealed the co-suppression of most volatile compounds alongside off-flavor compounds, while a subset of alcohols and esters showed opposite trends, indicating displacement-driven release. Emergent volatile compounds were also observed, supporting the matrix-induced redistribution. These findings provide mechanistic insights into the headspace distribution for plant-based protein beverages.

Berberine is a plant-derived isoquinoline alkaloid with anti-inflammatory and metabolic regulatory properties. Nevertheless, its role in immune–vascular remodeling in obese adipose tissue remains unclear. This study investigated whether berberine ameliorates obesity-induced adipose tissue remodeling by regulating macrophage activation and vascular dysfunction in a high-fat diet (HFD)-induced obesity model. Male C57BL/6 mice were assigned to normal diet, HFD, or HFD plus berberine treatment groups for eight weeks. Whole-mount immunofluorescence staining, vascular permeability assays, ELISA, and quantitative real-time PCR were performed using epididymal adipose tissue. HFD feeding markedly increased adipocyte hypertrophy, PECAM-1-positive vascular expansion, vascular leakage, and macrophage infiltration. Berberine significantly reduced adipocyte enlargement, pathological vascular remodeling, and Evans blue dye extravasation, indicating improved endothelial barrier integrity. Berberine also suppressed M1-associated (TNF-α, IL-1β, CD11c, and CCL2) and M2-associated (arginase-1, CD206, Fizz1, and TGF-β1) macrophage markers, suggesting the inhibition of global macrophage hyperactivation rather than phenotype-specific polarization. LYVE-1-positive cells were minimally affected by the berberine treatment. Hence, berberine alleviates obesity-associated adipose tissue inflammation through coordinated attenuation of macrophage-driven inflammatory responses and pathological vascular remodeling.

Hearing loss is a prevalent sensory disorder in which oxidative stress plays a central role in cochlear damage. This study evaluated the cytoprotective and antioxidant effects of Sargassum thunbergii (Mertens ex Roth) Kuntze(ST) extracts in UB-OC1 cells and investigated the underlying molecular mechanisms. Among the fractions, the water extract (STW) and celluclast-assisted extract (STC) showed low cytotoxicity and significantly attenuated H2O2-induced cell damage, whereas the other fractions showed higher toxicity. STW and STC effectively reduced the intracellular reactive oxygen species (ROS) levels in a dose-dependent manner, indicating direct antioxidant activity. Mechanistically, STW and STC enhanced NRF2 activation, as evidenced by the increased intracellular accumulation and nuclear localization of NRF2. Although Nrf2 mRNA expression showed only modest changes, the downstream target gene HO-1 was significantly upregulated, while keap1 expression was reduced, suggesting enhanced NRF2 stabilization and activation. These findings show that STW and STC protect cochlear hair cell-like cells against oxidative stress-induced damage by suppressing ROS accumulation and activating the NRF2/HO-1 signaling pathway. These results suggest that S. thunbergii may be a promising functional resource for protecting auditory hair cell-like cells against oxidative stress.

This study investigated the effects of Acer tegmentosum Maxim. twig extract (AT) on adipocyte differentiation and lipid accumulation in 3T3-L1 cells. Treatment with AT (50 and 100 μg/mL) did not affect cell viability on day 3 but significantly reduced lipid accumulation in a dose-dependent manner on day 7. AT decreased the expression of the adipogenic transcription factors PPARγ and C/EBPα and suppressed the expression of adipogenesis- and lipogenesis-related markers, including aP2, FAS, ACC, and CIDEA. The AT treatment was also associated with the reduced expression of Tbx-1 and Cited-1, accompanied by decreased expression of the mitochondrial biogenesis-related markers PGC-1α and TFAM. In addition, OXPHOS Complex I protein expression was reduced by approximately 60% in the 100 μg/mL treatment group compared to the differentiated control group. Decreased AMPK and Bcl-XL expression was observed, whereas no cleaved caspase-3 activation was detected. These findings suggest that the anti-adipogenic effects of AT are associated with changes in the molecular pathways involved in mitochondrial biogenesis and energy metabolism. In conclusion, AT is a potential natural anti-obesity candidate.

This study evaluated the hair growth-promoting potential of Polygonum cuspidatum aqueous extract (PCAE) in human hair follicle dermal papilla cells (HFDPCs). Six plant-derived extracts were screened using an MTT assay, with Justicia procumbens aqueous extract as a positive control. PCAE was selected as the main candidate because it significantly enhanced HFDPC proliferation and showed the strongest activity. Among the P. cuspidatum extracts prepared with water, 50% ethanol, and 70% ethanol, the aqueous extract displayed the broadest effective concentration range without apparent cytotoxicity and was used for mechanistic analyses. PCAE significantly promoted HFDPC proliferation at 50–300 μg/mL and maintained cell viability even at 400 μg/mL. Western blot analysis showed that PCAE increased Akt phosphorylation in a concentration-dependent manner while decreasing β-catenin protein expression. DKK1 mRNA was strongly up-regulated by PCAE, consistent with the observed decrease in β-catenin. RT-qPCR analysis further showed robust induction of FGF7 mRNA, significant induction of VEGF at selected concentrations, and marked down-regulation of IGF-1. These findings suggest that PCAE enhances HFDPC proliferation in association with Akt phosphorylation and selective regulation of hair growth-related paracrine factors. PCAE may be a potential natural material for hair loss prevention and hair growth promotion.

This study examined the effects of Mentha suaveolens Ehrh. (MS) extract on myogenic differentiation and myotube formation in C2C12 skeletal muscle cells. C2C12 myoblasts were differentiated in the presence of MS extract (50 μg/mL), and their effects on myotube formation and the expression of muscle differentiation-related proteins were investigated. The MS treatment significantly enhanced myotube formation and increased the expression of myogenic regulatory factors, including MyoD and Myogenin. Furthermore, the MS extract upregulated the expression of phosphoinositide 3-kinase (PI3K), phosphorylated 70-kDa ribosomal protein S6 kinase (p-p70S6K), and eukaryotic translation initiation factor 4E-binding protein 1 (4EBP1), indicating the activation of protein synthesis-related signaling pathways. In addition, the expression levels of Desmin and protein arginine methyltransferase 7 (PRMT7), which are involved in muscle differentiation and maturation, were increased significantly after the MS treatment. These results suggest that the MS extract promotes myogenic differentiation and myotube formation by regulating the myogenic factors and protein synthesis-associated signaling pathways in C2C12 cells. Therefore, the MS extract may serve as a promising functional food ingredient for supporting muscle health and muscle development.

This study evaluated the consumer perceptions and sentiment responses toward plant-based flour alternative noodles using large-scale online review data. As the interest in health, sustainability, and plant-based diets grows, products such as soybean, konjac, and seaweed noodles are gaining popularity as alternatives to traditional wheat-based noodles. Genuine consumption experiences were captured by analyzing 158,886 reviews from the Korean online grocery platform Market Kurly. An integrated analytical framework combining text mining, Latent Dirichlet Allocation topic modeling, sentiment analysis, and random forest regression was used. Ten latent topics were identified and grouped into three main dimensions: cooking and usage, health and dieting, and product attributes and evaluations. The results showed that consumer perceptions go beyond simple diet motives and reflect a range of experiential and functional considerations. Soybean noodles were appreciated for their versatility in cooking, but were limited by the unfamiliar textures. Konjac noodles were strongly linked to weight management but restricted by sensory dissatisfaction. Seaweed noodles received positive perceptions for their unique texture and affordability. This paper provides data-driven insights into consumer perception structures and sentiment patterns in the growing plant-based alternative food market and offers practical implications for future product development and marketing strategies.

This study evaluated the career decision-making process of culinary arts specialized high school students and developed a substantive theory explaining how occupational self-image congruence was reconstructed through career experiences. A grounded theory approach based on Strauss and Corbin (1998) was used. Data were collected through focus group interviews and supplementary in-depth interviews with nine culinary arts specialized high school students in Seoul, South Korea, and analyzed using open, axial, and selective coding procedures. The analysis yielded 36 concepts, 18 subcategories, and six categories, which were integrated into a paradigm model. The core category was identified as “a process of career compromise and acceptance while transitioning from the ideal self to the actual self by confronting occupational reality.” Greater occupational self-image congruence was associated with stronger career-preparation behaviors and persistence in career decision-making. The findings suggest that career decision-making was a dynamic process of reconstructing occupational self-image while balancing ideal aspirations with occupational reality. This study provides theoretical and practical implications for career education and counseling for culinary arts specialized high school students.

This study reconstructed the distinctive features and classification system of Korean jang manufacturing technology by analyzing the production methods, names, and uses of jang recorded in early Joseon cookbooks and by examining its relationship to kimchi-making culture. The relevant records in four cookbooks compiled before the sixteenth century—Sangayorok, Suunjapbang, Gyemiseo, and Jucochimjeobang—were closely analyzed. Early Joseon jang can be divided into two broader systems: a rapid-fermented type produced under high summer temperatures and a long-aged type based on byeongguk (lump-shaped meju, 餠麴) fermented in winter. These were further subdivided into four types: Jeonsi, Cheongjang, Jeupjang, and Jang. Although both systems coexisted, rapid-fermented jang predominated with its main intended use as a liquid seasoning, while the residue was reused for re-extraction rather than consumed independently like later doenjang. A reexamination of jeongukjang also shows that early Joseon jeonsi/jeonguk and late Joseon cheonggukjang belonged to different microbiological lineages despite continuity in name. These findings identify early Joseon jang culture as a multi-layered fermentation system.

This study examined the effects of vegetable-focused nutrition education on vegetable preference and the Nutrition Quotient for Preschoolers (NQ-P) among children aged 3–5 years. Two hundred and forty-four children participated, and the data were analyzed using paired t-tests based on measurements taken before and after four nutrition education sessions. Overall, 51.6% of the children exhibited picky eating behaviors, characterized by slower eating speed, food neophobia, and a preference for limited food variety (p<0.001). The most commonly refused food groups were shellfish and vegetables. After the nutrition education, the vegetable preference improved significantly among children with picky eating behaviors (p<0.001), including increased preferences for broccoli (p<0.01), paprika (p<0.001), mushrooms (p<0.001), and radish (p<0.05). The total NQ-P score for all participating children was 61.5, with the practice domain score highest and the moderation domain score lowest. Following the nutrition education, the moderation domain scores increased significantly (p<0.05). Among picky-eating preschoolers, the total NQ-P scores (p<0.05) and practice domain scores (p<0.01) increased significantly after the nutrition education. These findings suggest that vegetable-focused nutrition education can improve dietary behaviors, particularly in preschool children with picky eating tendencies.

This study examined the association between the food choice behavior and blood pressure among hypertensive adults aged 50 years or older and identified subgroup differences by individual characteristics. Data were obtained from the 2019-2020 Korea National Health and Nutrition Examination Survey. A total of 1,954 hypertensive adults aged 50 years or older were included. The food choice behavior was assessed using nutrition label use in food choice and dietary restriction. Differences in the systolic and diastolic blood pressure were examined using descriptive statistics, univariate analyses, and decision tree analysis. The proportion of nutrition label use in food choice was higher in females than in males. Among the non-smokers aged under 68 years, the systolic blood pressure was significantly lower in the nutrition label use group (p<0.05). Among the participants aged 79 years or older, the diastolic blood pressure was significantly lower in the dietary restriction group (p<0.05). Decision tree analysis showed that the association between food choice behavior and blood pressure differed according to age and smoking status. These findings highlight the need for subgroup-specific nutrition education strategies to support blood pressure management in older hypertensive patients.

As climate and environmental challenges intensify, shifting toward sustainable food systems has become a global priority. This study aimed to develop Sustainable Dietary Shift Guidelines for Korean adults (K-Sustainable Dietary Shift Guidelines) based on the optimized sustainable dietary pattern previously developed for Korean adults. Directions for dietary shift were derived by comparing the current dietary pattern with the optimized sustainable dietary pattern among Korean adults. The directions included increasing intake of vegetables, fruits, and plant-based protein foods; reducing intake of animal-based protein foods, sugars, and seasonings; and shifting grain and fat intake toward whole and mixed grains and plant-based fats. Based on the directions, 7 dietary shift guidelines were developed: Fill two-thirds of your plate with grains, vegetables, and fruits; Eat more whole grains and mixed grains; Eat more vegetables and fruits; Replace meat with fish and legumes; Include a handful of nuts in your daily diet; Cut back on sugary and salty foods; and Replace animal fats with plant-based oils. Specific action guides were also developed to support adherence to the guidelines. The K-Sustainable Dietary Shift Guidelines provide evidence-based and practical guidance for sustainable diets and may serve as a useful resource for nutrition education and food policy.
